1 teaspoon salt
1 teaspoon baking powder
1 cup shortening
4 large egg yolks
2 tablespoons lemon juice
8 to 10 tablespoons cold water
FILLING:
7 cups finely chopped peeled apples
2 cups sugar
1/4 cup all-purpose flour
2 teaspoons ground cinnamon
Dash ground nutmeg
GLAZE:
1 cup confectioners' sugar
1 tablespoon 2% milk
1 tablespoon lemon juice

Steps:

  • In a large bowl, combine flour, salt and baking powder. Cut in shortening until mixture resembles coarse crumbs. In a small bowl, whisk the egg yolks, lemon juice and water; gradually add to flour mixture, tossing with a fork until dough forms a ball. Divide in half. 1 1/2 pounds Granny Smith apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)

1/4 cup granulated sugar

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup butter, softened
3-1/4 cups flour, divided
10 Granny Smith apples, peeled, sliced (about 9 cups)
1-1/4 cups granulated sugar
1 tsp. ground cinnamon
3/4 cup powdered sugar
1 Tbsp. water

Steps:

  • Heat oven to 400ºF.
  • Beat cream cheese and butter in large bowl with mixer until blended. Gradually add 3 cups flour, mixing on low speed after each addition just until blended. Shape into 2 balls. Place 1 ball on large lightly floured sheet of waxed paper; flatten slightly. Cover with second floured sheet of waxed paper. Roll out dough to 15-1/2x10-1/2-inch rectangle. Discard top sheet of waxed paper.
  • Spray 15x10x1-inch pan with cooking spray; invert over rolled-out dough. Flip dough and pan together. (Pan will be on bottom.) 1 1/2 pounds/680 grams tart apples, such as Granny Smith (about 3 large), peeled, cored and cut into 1/8-inch slices
1 1/2 pounds/680 grams sweet-tart apples, such as Fuji, Pink Lady or Gala (about 3 large), peeled, cored and cut into 1/8-inch slices
3 tablespoons lemon juice
1/4 cup/55 grams unsalted butter (1/2 stick)
1 teaspoon ground cinnamon
1 teaspoon freshly grated nutmeg
