6 tart apples cut into 1" chunks
5 tbsp sugar
2 tsp ground cinnamon
3 cups all purpose flour
2 cups sugar
1 tsp baking powder
1 tsp kosher salt
4 large eggs

1/4 cup fresh orange juice
2 1/2 tsp vanilla extract

  • Preheat oven to 350 with rack in the middle Butter a 10" tube pan and line the bottom with a ring of parchment paper. In a bowl toss the apples with the sugar and cinamon and set aside to make the batter: in a bowl whisk together the dry ingredients In another bowl whisk together the remaining ingredients with an electric mixer gradually beat in the dry ingredients. spread half of the batter evenly in the prepared pan and scatter half of the apples over the top. juice of 1/2 a lemon
1 c butter, softened
1 1/4 c golden caster sugar* (extra fine sugar)
4 large eggs
2 tsp vanilla extract
1 1/2 c self-rising flour
2 tsp baking powder
2 Tbsp demerara sugar *

Steps:

  • 1. Pre-heat oven to 350^. Spray a 10-inch round baking pan. Place apple slices in a bowl and squeeze the juice over them and stir to coat all; set aside. Place butter and sugar in a large bowl and beat until fluffy. add eggs, and vanilla and incorporate well.
  • 2. Combine flour, baking powder and beat into batter until smooth. Spread 1/2 the batter in the prepared pan, then 1/2 the apple slices. Repeat with remaining batter and then the remaining apples on top.

6 large eggs, separated
1-1/3 cups cake flour
1-1/2 cups sugar, divided
1/4 teaspoon salt
1/2 cup orange juice
3 teaspoons grated orange zest
3/4 teaspoon cream of tartar
GLAZE:
1/3 cup butter, cubed
2 cups confectioners' sugar
3 to 5 teaspoons water
1-1/2 teaspoons vanilla extract

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Sift the flour, 1/3 cup sugar and salt together twice; set aside., In another bowl, beat egg yolks on high speed for 5 minutes or until thick and lemon-colored. Gradually beat in 2/3 cup sugar. Add orange juice and zest; beat 3 minutes longer. Gradually add flour mixture and mix well., Add cream of tartar to egg whites; beat on medium speed until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff peaks form. Fold into batter., Gently spoon into an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets., Bake on the lowest oven rack at 325° for 45-55 minutes or until cake springs back when lightly touched. For glaze, melt butter in a small saucepan; remove from the heat. Add confectioners' sugar, water and vanilla; stir until smooth. Pour over cake, allowing it to drizzle down sides.

2 oranges,rind and juice
1 tbsp honey
200g butter,softened
150g granulated sugar

350g plain flour

1 teaspoon baking powder
¼ teaspoon salt
1 stick (½ cup) unsalted butter, at room temperature
⅔ cup granulated sugar, plus more for sprinkling over cake
2 large eggs
1 teaspoon vanilla extract
3 tablespoons dark rum
2 baking apples, peeled, cored and cut into ½-inch cubes (I like Honeycrisp, Fuji or Granny Smith) (3½ - 4 cups chopped)
Confectioners' sugar (optional), for decorating cake

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Grease a 9-inch springform or regular cake pan with butter or nonstick cooking spray. If using a regular cake pan, line the bottom of the pan with parchment paper and grease again.

1/3 cup orange juice
2 tablespoons grated orange zest

ORANGE GLAZE:
1 cup water
1/2 unpeeled orange, finely chopped
1/4 cup sugar
1/2 cup confectioners' sugar
1 tablespoon butter

  • In a large bowl, beat egg yolks until slightly thickened. Gradually add 3/4 cup sugar and beat until thick and lemon-colored. Blend in orange juice and zest. Sift together flour and salt; add to batter. Beat until smooth. In another bowl, beat egg whites until soft peaks form. While beating, add the remaining sugar, 1 tablespoons at a time. Beat until stiff. Fold 1/4 of the egg whites into the batter; then fold in remaining whites. Spoon into an ungreased 10-in. tube pan, smoothing top.
