- 1. Preheat Oven @ 350 Grease & Flour 9X5 loaf pan
- 2. In Med Bowl Cream: Butter, Sugar, Egg and Rind, Beat about 3-4 min.
- 3. ADD; Orange Juice, Blend to Combine SIFT TOGETHER: Flour, Soda, & salt Add: to Creamed Mixture
- 4. Stir in Pineapple With the Juice. Add; Nuts (optional) NOTE: If batter is too thick, add a little more OJ. Batter will be thick but, only to Quick Bread Consistancy.
- 5. Pour into Greased and Floured Pan, Now See TIP BELOW. BAKE @ 350 for 45- 50 min or til tests Done. Long toothpick ( Skewer I use) TIP: Make a shallow troff down the center of the mix in the pan, with your spoon, then add the remaining drained pineapple in the troff right down the center of the Loaf. Now its ready to bake. ENJOY. . . Smells so good Baking. . . Very Moist Bread.

- Stir together flour, baking powder, salt, and nuts.
- In a large bowl, beat together butter or margarine and 1 cup sugar. Beat in eggs one at a time. Stir in rind and 1/2 cup juice. Pour in flour mixture, and stir until moistened. Turn into a greased 9 x 5 x 3 inch loaf pan.
- Bake at 350 degrees F (175 degrees C) for 1 hour, or until done. Remove loaf from oven, but not from pan.
- Combine 1/2 cup orange juice with 1/4 cup sugar in a small saucepan. Heat and stir to dissolve sugar. Spoon glaze over hot loaf. Let stand in pan for 10 minutes before removing loaf to rack to cool.

- In blender or food processor, process apples, oranges and raisins until finely chopped, set aside.
- In a large mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition; beat until light and fluffy. Beat in extract.
- Combine dry ingredients; add to creamed mixture alternately with orange juice. Stir in fruit mixture and nuts.
- Pour into 3 greased 8" X 4" loaf pans. Bake at 350 degrees for 50-55 minutes, or until a wooden pick inserted near center comes out clean.
