CARAMEL APPLE DESSERT NACHOS



Caramel Apple Dessert Nachos image

4 ounces cream cheese, at room temperature
2 tablespoons brown sugar
Zest from 1/2 lemon plus 1 teaspoon lemon juice
10 caramels, unwrapped
2 Granny Smith apples, sliced
1 Gala apple, sliced
2 teaspoons sprinkles
1 cup potato chips, crumbled, optional

Steps:

  • Mix the cream cheese, brown sugar and lemon zest and juice in a bowl until smooth. Transfer to a plastic bag and snip the corner to make about a 1/4-inch opening. Set aside.
  • Add the caramels and 1 1/2 teaspoons water to a saucepan over medium-low heat. Cook, stirring, until the caramels are melted, 4 to 5 minutes. Arrange the apple slices fanned out and overlapping on a plate. Squeeze the cream cheese-lemon sauce on top. Drizzle the warm caramel over the apples and cream cheese sauce. Garnish with sprinkles and potato chips if using and serve immediately.

35 large marshmallows
¼ cup butter
35 caramels
1 tablespoon half-and-half
4 large apples, sliced
2 tablespoons chocolate syrup
1 (2.25 ounce) package chopped nuts

Steps:

  • Combine marshmallows and butter in a large pot over medium heat; cook and stir until melted and smooth, about 5 minutes.
  • Combine caramels and half-and-half in a microwave-safe bowl. Heat in the microwave in 30-second intervals, stirring after each interval, until melted, about 2 minutes.
  • Arrange apple slices on a large serving dish. Drizzle marshmallow mixture over the apples. Drizzle caramel sauce and chocolate syrup on top. Garnish with chopped nuts.

36 caramels
1 tablespoon water
30 large marshmallows
1/3 cup butter, cubed
4 medium tart apples, cored and cut into 1/4-inch slices
1/3 cup chopped dry roasted peanuts
1/3 cup miniature semisweet chocolate chips
3 tablespoons Halloween sprinkles

Steps:

  • In a microwave, melt caramels with water; stir until smooth., Meanwhile, in a large saucepan, melt marshmallows and butter. Arrange apple slices on a large platter. Drizzle with caramel; top with marshmallow mixture. Sprinkle with peanuts, chocolate chips and sprinkles. Serve immediately.

I took one look at the RSC ingredients and saw a homemade classic...but I didn't want the same old, same old. This dessert is fairly easy to put together and after little more than 30 minutes, you've got delicious warm apples with crispy cinnamon crunch, all topped with cool whipped cream and a bit of crunch to boot! Enjoy!

2 tortillas
1 tablespoon cinnamon
1/2 cup sugar
2 cups vegetable oil
2 baking apples, diced into 1/2 inch pieces (I used braeburn)
4 teaspoons fresh lemon juice
2 tablespoons brown sugar (light or dark)
1 ounce Amaretto
1 cup heavy whipping cream
1/4 cup sugar
1 teaspoon vanilla
1/4 cup pecans, chopped

Steps:

  • Heat oil until it "speaks" when you sprinkle water into it. Cut each tortilla in half, then cut each half into 4 wedges.
  • Mix cinnamon and sugar in a shallow dish with another paper towel lined dish right next to it.
  • Put 2-4 tortilla wedges into the hot oil and cook until light brown on each side, flipping only once (this should take about 1 minute). Remove immediately from oil one by one and completely cover in cinnamon sugar mixture on both sides before placing on towel lined dish to cool and drain.
  • When finished with crispas, toss together diced apples and lemon juice.
  • Put apples, lemon juice and amaretto into a medium-sized skillet and cook over medium heat until apples just start to get tender and barely break down.
  • Add brown sugar and stir well until evenly distributed. Remove pan from heat.
  • Beat heavy whipping cream (works best in a chilled bowl) just until stiff.
  • Gradually add sugar and vanilla and beat until stiff peaks form.
  • On a plate or platter, set out each crispa individually. Top with a teaspoon or more of apple mixture, then a dollop of whipped cream. Sprinkle with chopped pecans.

24 inches flour tortillas, cut into quarters
1 tablespoon cinnamon
1/2 cup sugar
3 baking apples, peeled and diced into 1/2 inch pieces (I used Macoun)
2 tablespoons brown sugar (light or dark)
1 ounce Amaretto or 1 ounce cognac
4 ounces fat-free cool whip
1/4 cup pecans, chopped

Steps:

  • Heat oven to 350 degrees. Mix cinnamon and sugar together (I use my Pampered Chef sugar shaker for this). Spread tortilla quarters on cooking sheet or jelly roll pan and spray with cooking spray, shake cinnamon/sugar over tortillas, then spray lightly again. Bake in oven for 10-15 minutes or until crisp, but not burnt.
  • While crispas bake, put apples and amaretto into a medium-sized skillet and cook over medium heat until apples just start to get tender and barely break down.

  • Melt the marshmallows and butter in a saucepan over low heat. Stir periodically until completely melted and smooth. Combine the caramels and water in a bowl and microwave until melted. I microwaved mine in 45 second intervals, stirring in between until the caramel was smooth. Arrange the sliced apples on a plate and pour the caramel and marshmallow mixtures over them. 5 flour tortillas
2 granny smith apples
cinnamon
sugar
caramel sauce-jarred or homemade
~~~homemade caramel sauce~~~
melt soft caramel candies in a saucepan over medium heat. add a little half n' half cream to thin it out. and thats it!

Steps:

  • 1. Preheat oven 350 degrees F
  • 2. cut tortillas into wedges and put on baking pan
  • 3. spray with fat free cooking spray or water and sprinkle with cinnamon and sugar
  • 4. bake until crisp (another 3-5 minutes)
  • 5. While wedges are cooling heat up caramel sauce
  • 6. Peel, core, and grate apples
  • 7. generously sprinkle apples onto tortillas and drizzle caramel sauce all over.
  • 8. (there really aren't exact amounts just "eyeball" everything to your own personal tastes...hope you enjoy!)
