1/4 teaspoon vanilla, plus 1/2 teaspoon
1 1/4 cups all-purpose flour, plus 1/3 cup
6 ounces cream cheese, softened
1/4 cup sugar
1 egg
1 1/2 cups peeled and chopped apples
1 1/2 cups peeled and thinly sliced apples
2 tablespoons apple juice
2 tablespoons brown sugar, plus 1/3 cup packed
1 teaspoon ground cinnamon
1/2 teaspoon lemon juice
1/2 cup rolled oats
1/4 cup butter or margarine

Steps:

  • Preheat oven to 350 degrees F
  • In a bowl, combine 1/2 cup butter, 1/4 cup sugar, and 1/4 teaspoon vanilla. Gradually beat in 1 1/4 cups flour. Press crumbly mixture onto bottom and up sides of 9-inch pie plate. Bake in oven for 5 minutes. Cool.

1/4 cup apple juice (preferably unfiltered fresh)

Steps:

  • Combine first 5 ingredients in small bowl. Mix in cream. Let stand until sugar dissolves and filling thickens, stirring occasionally, about 30 minutes.
  • Preheat oven to 350°F. Using small sharp knife and starting at side of apple at center point, cut around each apple to make slit in skin to prevent bursting.
