HERMITS

Hermits image

Dress up a cookie plate with these old-fashioned spice bars full of raisins, molasses, cinnamon, ginger and nuts. Then dip the chewy treats in coffee or hot cocoa on frosty days. It's said the cookies are called "hermits" because you can hide them out of sight, just like hermits, for days. They'll be just as good-maybe even better as the flavors blend and develop! -Jeri Tirmenstein, Apache Junction, Arizona

APPLE HERMITS

This came to my inbox today, and since it's almost apple season here in the Northeastern US I thought I'd share it! The descriptions says, "This is a moist and cake like, spicy, nutty, apple cookie." I can't wait to try it! The recipe is from Aunt Mikie at Allrecipes.com, although I added my own touches. If you make it with the soy milk and unsalted margarine it's lactose-free!

Tips:

  • Use the right type of apples. Granny Smith, Honeycrisp, and Pink Lady apples are all good choices for this recipe, as they hold their shape well and have a tart flavor that complements the sweetness of the filling.
  • Peel and core the apples before cooking them. This will help to prevent the filling from becoming too mushy.
  • Cook the apples until they are softened but still hold their shape. You don't want them to become too mushy, or they will make the filling too runny.
  • Be careful not to overfill the hermit cookies. If you do, they will be difficult to close and the filling will ooze out.
  • Bake the hermit cookies until they are golden brown. This will ensure that they are cooked through and the filling is set.

Conclusion:

Apple hermit cookies are a delicious and easy-to-make treat that are perfect for any occasion. They are a great way to use up leftover apples, and they can be made ahead of time and frozen for later. With their sweet and tart filling and flaky crust, apple hermit cookies are sure to be a hit with everyone who tries them.
