Time 25m

Yield 2 serving(s)

Number Of Ingredients 9

2 slices challah, from middle of loaf (each about 2 inches thick)
3 ounces grated gruyere cheese (about 3/4 c)
1/4 small red onion, very thinly sliced
2 large eggs, lightly beaten
3/4 cup whole milk
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 tablespoons extra virgin olive oil
1 small apple, cored peeled and thinly sliced

Steps:

  • Cut a pocket in each bread slice through the bottom crust, parallel to the cut surfaces. Do not cut through the top crust. Stuff each with half the cheese and a few onion slices.
  • Whisk together eggs, milk, salt, and pepper. Pour into a wide, shallow dish. Place stuffed bread into custard. Turn over after about 2 minutes, then let stand until most of the liquid is absorbed.
  • Heat oil over medium heat in a large skillet. Place half the apples in a single layer and cook 1 minute. Place the stuffed, soaked bread on the apples and cover with the remaining apple slices. Cook 1 minute.
  • Cover pan, reduce heat to medium-low, and cook 5 minutes. Uncover pan, increase heat back to medium, and cook until bottom is golden brown, about 2 minutes. Carefully turn bread over and cook until golden, 3-5 minutes.

Yield Serves 4

Number Of Ingredients 7

1 tablespoon olive oil
1 pound onions, sliced thin
2 teaspoons chopped fresh rosemary leaves or 1/4 teaspoon dried, crumbled
2 teaspoons white-wine vinegar
4 oval slices rye bread
1/2 Granny Smith apple
1/4 pound thinly sliced Gruyère cheese (use a cheese plane if possible)

Steps:

  • In a 10-inch heavy skillet heat oil over moderate heat until hot but not smoking and cook onions with rosemary, stirring occasionally, until golden, about 10 minutes. Stir in vinegar and salt and pepper to taste and cook until vinegar evaporates. Cool onion mixture.
  • Preheat broiler.
  • On a baking sheet toast both sides of bread about 3 inches from heat until golden. Core apple with a melon-ball cutter and cut crosswise into very thin slices. Divide onion mixture among toasts, spreading evenly, and cover with overlapping apple slices. Cover apple slices with Gruyère and broil sandwiches until cheese is melted and bubbling, about 1 minute.

SAUERKRAUT AND APPLES

Sauerkraut and Apples image

In the Chesapeake, seafood often finds its way onto the Thanksgiving menu. But in Baltimore, which has a strong eastern European and German immigrant history, the holiday table demands something else. "The absence of sauerkraut when turkey is present, Thanksgiving included, is unthinkable, comparable to potatoes without gravy or crisp French fries without ketchup," wrote John Shields, the chef and owner of Gertrude's restaurant in Baltimore, in his cookbook "Chesapeake Bay Cooking." (Sauerkraut is a mainstay well beyond Thanksgiving; Gertrude's hosts an annual Krautfest in January.) Traditionally, homemakers fermented the cabbage in earthenware crocks in their cellars, but these days the fresh stuff is available to buy. On Thanksgiving, it's often simply served as a side, or incorporated into dishes like this, in which the sauerkraut is braised in beer with bacon and apples.

Time 55m

Yield 8 servings

Number Of Ingredients 8

6 tablespoons butter
4 slices bacon, cut into 1/2-inch pieces
1 small onion, thinly sliced
3 tart apples, such as Stayman, Pippin, Granny Smith or Jonagold, peeled, cored, and thinly sliced
2 pounds sauerkraut, drained and rinsed
1 bottle (12 ounces) beer (you may substitute apple cider)
Black pepper, to taste
1/2 teaspoon caraway seeds

Steps:

  • Melt butter in a large heavy pot over medium-high heat. Add bacon and cook, stirring often, until fat has started to render, about 5 minutes.
  • Toss onion and apples in the fat and cook, stirring occasionally, until onions begin to soften, about 3 minutes. Stir in sauerkraut.
  • Add beer and season with pepper and caraway seeds. Bring mixture to a boil, then cover the pot. Reduce heat so mixture is just simmering and cook for 45 minutes. Or transfer the covered pot to a 350-degree oven and bake for 1 hour. Stir and serve hot.

Tips:

  • Use a variety of apples for a more complex flavor. Granny Smith, Honeycrisp, and Pink Lady are all good choices.
  • If you don't have Gruyère cheese, you can substitute another hard cheese that melts well, such as Cheddar or Swiss.
  • Use a sturdy bread for the French toast, such as sourdough or brioche. This will help it hold up to the fillings and toppings.
  • Be careful not to overcrowd the pan when cooking the French toast. This will prevent it from cooking evenly.
  • Serve the French toast immediately, while it's still hot and crispy.

Conclusion:

Apple Gruyère French Toast with Red Onion is a delicious and easy-to-make breakfast or brunch dish. It's perfect for a special occasion or a lazy weekend morning. The combination of sweet apples, savory cheese, and tangy red onion is sure to please everyone at the table.
