6 Cornish game hens (20 to 24 ounces each)
1 tablespoon cornstarch
1 cup thawed apple juice concentrate
3 lemon slices
1/2 teaspoon ground cinnamon

Steps:

  • Tie legs of each hen together; tuck wings under hens. Place on a greased rack in a roasting pan. In a small saucepan, combine cornstarch and apple juice concentrate until smooth. Stir in the lemon slices and cinnamon. Bring to a boil; cook and stir for 1 minute or until thickened., Spoon half of the glaze over the hens. Bake, uncovered, at 375° for 1 to 1-1/4 hours or until a thermometer reads 180°, basting occasionally with remaining glaze.

3 Tbsp water
1 Tbsp cornstarch
1 tsp ground cinnamon
4 cornish hens
1 1/2 c apple juice, unsweetened concentrate undiluted
1 medium sliced lemon

Steps:

  • 1. Remove Giblets from Hens, Rinse Hens under cold running water and pat dry - using a long sharp knife, split Hens Lengthwise ( you could also buy pre-cut Hens ) Place the Hens cavity side up in a roasting pan. heat oven to 350
  • 2. Take out 1/2 cup of the undiltued apple juice concentrate , put in a bowl add the 3 Tabsp. water, mix well and pour over hens in the roasting pan. Place Pan in oven and Bake Uncovered for 45 minutes.
  • 3. In a saucepan , put the remaining 1 cup of Undiluted Apple Juice , cornstarch and cinnamon, Mix Well, and add in 4 of the Lemon slices - Place Pan over Medium Heat, stir and cook till thickened, Then remove from heat.
  • 4. Take Hens out of oven and turn them Breast side up, and brush the hens with the Apple Glaze. Return the Hens to the oven and continue to bake for 15 minutes. When Hens are done remove from oven and place on a serving platter and arrange the remaining lemon slices on them as garnish.
