Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 14

1 boneless beef brisket (4 to 5 lbs.)
1 medium quartered onion
2 cloves garlic, halved
10 whole cloves
water
1 ounce apple jelly
1/3 cup dry white wine
3 tablespoons Dijon mustard or 3 tablespoons spicy brown mustard
3 tablespoons green onions, minced w/tops
1 1/2 teaspoons salt
3/4 teaspoon cracked black peppercorns
3/4 teaspoon curry powder
parsley
tomatoes, cut into roses

Steps:

  • Place brisket; onion, garlic and cloves in large dutch oven.
  • Add water to cover.
  • Bring to a boil.
  • Reduce heat, cover and simmer 2 1/2 to 3 hours or until tender.
  • Drain brisket, cover and refrigerate up to 24 hours.
  • To prepare glaze, combine apple jelly, wine, mustard, green onions, salt, peppercorns and curry powder in small saucepan and heat until jelly melts, stirring occasionally.
  • Place brisket in shallow roasting pan.
  • Brush with glaze and roast in preheated 325-degree oven 45 minutes, basting frequently with glaze.
  • Place brisket on heated serving platter and garnish with parsley and tomato roses.
  • Carve brisket into thin slices and serve with remaining glaze.
  • Brisket may also be cooked on charcoal grill for 30 minutes, basting often with glaze.

Tips:

  • For a tender and flavorful brisket, choose a cut that is well-marbled with fat. Brisket is a tough cut of meat, so it benefits from long, slow cooking methods like braising or smoking.
  • Season the brisket generously with a flavorful rub before cooking. A good rub will help to create a crispy crust on the outside of the brisket and infuse it with flavor throughout.
  • Braise the brisket in a flavorful liquid, such as beef broth or apple cider. This will help to keep the brisket moist and tender during the long cooking process.
  • Cook the brisket until it is fall-apart tender. This can take several hours, so be patient. The brisket is done when it reaches an internal temperature of 200 degrees Fahrenheit.
  • Make the apple glaze while the brisket is cooking. The glaze is simple to make and adds a delicious sweetness and tang to the brisket.
  • Brush the brisket with the apple glaze during the last 30 minutes of cooking. This will help to caramelize the glaze and create a beautiful crust on the brisket.

Conclusion:

Apple-glazed beef brisket is a delicious and impressive dish that is perfect for a special occasion. With its tender meat, flavorful glaze, and beautiful presentation, this brisket is sure to be a hit with everyone at your table. So next time you're looking for a special meal to make, give this apple-glazed beef brisket a try.
