4 medium tart apples, peeled and sliced
1/2 cup water
1/2 cup packed brown sugar
1 tablespoon lemon juice
1/4 teaspoon ground cinnamon
1 egg
1/4 cup sugar
1/2 cup buttermilk
1/4 cup molasses
2 tablespoons canola oil
1 cup all-purpose flour
1/2 teaspoon each baking powder, baking soda and ground ginger
1/4 teaspoon each salt and ground nutmeg
3 teaspoons cornstarch
1 tablespoon cold water

Steps:

  • In a saucepan, combine the apples, water, brown sugar, lemon juice and cinnamon. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until apples are tender. Remove from the heat and set aside., In a bowl, beat the egg, sugar, buttermilk, molasses and oil. Combine the flour, baking powder, baking soda, ginger, salt and nutmeg; stir into buttermilk mixture just until combined. Combine cornstarch and cold water until smooth; stir into apple mixture. Pour apple mixture into 8-in. square baking dish coated with cooking spray. Spread gingerbread mixture over apples. Bake at 350° for 25-30 minutes or until a toothpick inserted into the topping comes out clean.

4 medium cooking apples, peeled and sliced
1 c water
1/2 c firmly packed brown sugar
1 Tbsp lemon juice
1/4 tsp ground cinnamon
2 tsp cornstarch
1 Tbsp cold water
1/2 c buttermilk
1/4 c sugar
1/4 c molasses
2 Tbsp vegetable oil
1 large egg
1 c all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp ground ginger
1/4 tsp ground nutmeg

Steps:

  • 1. Combine the first 5 ingredients in a medium saucepan; stir well. Bring to a boil; cover, reduce heat, and simmer 10 minutes or until the apple is tender.
  • 2. Combine the cornstarch and 1 tablespoon water; add to the apple mixture, stirring well. Pour into a lightly greased 2-quart baking dish.
  • 3. Combine the buttermilk, 1/4 cup sugar, molasses, oil, and egg in a small mixing bowl; beat at medium speed of an electric mixer until smooth.
  • 4. Combine the flour and the remaining ingredients; stir well. Add to the buttermilk mixture, beating until blended. Pour the batter over the apple mixture.
  • 5. Bake at 350 degrees for 35 minutes or until lightly browned. Serve warm.

1/2 cup All-Bran® Original or Bran Buds®
2/3 cup hot water
1/4 cup light molasses
1/4 cup shortening
1 egg, slightly beaten
1 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cloves
1/2 teaspoon ginger

Steps:

  • 1. Spread apples in 10 x 6 x 2-inch or 8 x 8 x 2-inch glass baking dish coated with cooking spray. Combine brown sugar and margarine. Spread over apples. Sprinkle water over apples. Set aside.2. In large bowl, combine KELLOGG'S ALL-BRAN cereal, hot water, molasses and shortening. Let stand about 5 minutes. Whisk in egg.3. Stir together flour, granulated sugar, soda, salt and spices. Add to cereal mixture, stirring until combined. Spoon batter over apples.4. Bake at 350°F about 40 minutes or until apples are tender. Serve warm or cold with whipped topping, if desired.
