Time 30m

Yield 4 servings

Number Of Ingredients 12

1 3- to 4-pound chicken, cut into 16 pieces
1 to 2 tablespoons corn or canola oil
1 large onion, chopped
1 clove garlic, minced
1/4 cup dry white wine
1 cup apple juice
1 tablespoon fresh ginger, finely chopped
1 tablespoon cornstarch
1 cup plain low-fat or nonfat yogurt
2 well-flavored apples, cored and cut into small chunks
Freshly ground black pepper to taste
8 ounces medium egg noodles, cooked and drained

Steps:

  • Remove as much skin and external fat as possible from chicken. Heat 1 tablespoon oil in nonstick skillet or 2 tablespoons oil in regular skillet large enough to hold chicken pieces in single layer. Brown chicken on both sides in hot oil over medium heat; remove and set aside.
  • Saute onion and garlic in same pan until onion is soft. Add wine, apple juice and ginger to pan and cook over medium-high heat until liquid is reduced to 1 cup.
  • Stir cornstarch into yogurt. Add to pan with apples and chicken and season with pepper. Cook, covered, for about 20 minutes, until chicken is cooked through.
  • Arrange noodles on each of 4 plates. Spoon chicken and sauce over noodles.

Tips:

  • Choose the right chicken: Boneless, skinless chicken breasts or thighs are best for this recipe, as they will absorb the marinade well and cook evenly.
  • Make the marinade ahead of time: The chicken needs to marinate for at least 30 minutes, but you can marinate it for up to 24 hours. This will allow the flavors to penetrate the chicken and make it extra tender and flavorful.
  • Use fresh ginger: Fresh ginger has a much more vibrant flavor than ground ginger, so it's worth taking the time to grate it yourself.
  • Don't overcrowd the pan: When you're cooking the chicken, don't overcrowd the pan. This will prevent the chicken from cooking evenly and will make it more likely to stick to the pan.
  • Cook the chicken over medium heat: Medium heat is the best temperature for cooking the chicken, as it will prevent it from burning and will allow it to cook through without drying out.
  • Serve the chicken with your favorite sides: This chicken is delicious served with rice, noodles, or vegetables. You can also add a sauce or glaze to the chicken for extra flavor.

Conclusion:

This apple ginger chicken marinade is a delicious and easy way to add flavor to your chicken. The marinade is made with simple ingredients that you probably already have on hand, and it can be used to marinate chicken breasts, thighs, or wings. The chicken can be cooked in a variety of ways, including grilling, baking, or pan-frying, and it can be served with your favorite sides. Whether you're looking for a quick and easy weeknight meal or a special dish for a party, this apple ginger chicken marinade is sure to please everyone.
