¼ cup apple juice
2 tablespoons brown sugar
1 medium ripe mango, peeled and sliced
2 medium ripe bananas, peeled and sliced
6 large strawberries, sliced crosswise
¼ teaspoon ground cinnamon
¼ cup dark rum
1 ½ scoops vanilla ice cream

Steps:

  • Set a large pan on the stove over medium-high heat. Pour apple juice into the pan and add brown sugar; let it simmer until golden and bubbling, about 4 minutes.
  • Put mango, banana, and strawberry slices in the pan with cinnamon. Stir to cover fruit with the sauce and cook for 3 minutes.
  • Remove pan from the heat and add rum. Place back on the heat and use a long lighter to set it on fire. Once the flame has gone out, cook for 1 more minute.

This is one of my most requested desserts over the holidays, but I make it often throughout the year.

2 eggs
3 egg yolks
1 cup whipping cream
3 cups milk
1 cup sugar
1 loaf French bread, sliced thick
2 tablespoons butter
1/4 cup raisins
1/4 cup sugar
5 Red Delicious apples, peeled and sliced
1/4 cup apple jack brandy (or Grand Mainer)
powdered sugar, for dusting

Steps:

  • Preheat oven to 400°F Wisk all custard ingredients. Set aside.
  • In frying pan, melt butter. Add raisins, sugar, and apples. Cook on med heat for about 5 minutes.
  • Add applejack brandy and CAREFULLY Flambe' till alcohol is cooked off. Then set pan aside to cool.
  • Place bread slices in bottom of 9 x 13 pan. Place apple mixture over bread. Pour custard over the apple mixture. Place in water bath and bake for 45 minutes.
  • Cool 20 minutes to serve warm, 3 hours in fridge to serve later or to serve chilled. Dust lightly with powdered sugar before serving.

1 pkg spice cake mix
1 can(s) apple pie filling
8 oz frozen whipped topping, thawed
2 fresh apples, sliced into rings
cinnamon, lemon rind shavings, butter
2 oz brandy
