Provided by Paula

Time 1h20m

Yield 8

Number Of Ingredients 7

½ cup packed light brown sugar
¼ cup butter, melted
1 tablespoon all-purpose flour
1 teaspoon salt
½ teaspoon ground mace
2 pounds butternut squash - peeled, seeded, and cut into 1/2 inch slices
2 large apples - cored, and cut into 1/2 inch slices

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together brown sugar, butter, flour, salt, and mace. Arrange squash in an ungreased 9x13 inch baking dish. Top with slices of apple, then sprinkle with the sugar mixture. Cover with a lid or aluminum foil.
  • Bake for 50 to 60 minutes in the preheated oven, or until squash is tender.

Nutrition Facts : Calories 185.8 calories, Carbohydrate 34.9 g, Cholesterol 15.3 mg, Fat 6 g, Fiber 3.6 g, Protein 1.5 g, SaturatedFat 3.7 g, Sodium 340.6 mg, Sugar 21.4 g

Tips:

  • Choose the right squash: Acorn squash, butternut squash, and kabocha squash are all good choices for this recipe. Look for squash that are firm and heavy for their size, with no bruises or blemishes.
  • Cook the squash until it is tender: The squash should be cooked until it is easily pierced with a fork. If the squash is not cooked through, it will be difficult to scoop out the flesh.
  • Don't overcook the apples: The apples should be cooked until they are softened, but still hold their shape. If the apples are overcooked, they will become mushy.
  • Use a variety of spices: The spices in this recipe can be adjusted to your taste. For a sweeter filling, add more cinnamon and nutmeg. For a spicier filling, add more ginger and cloves.
  • Serve the squash halves immediately: The squash halves are best served immediately after they are cooked. If you need to make them ahead of time, you can cook the squash and apples separately and then assemble the squash halves just before serving.

Conclusion:

Apple-filled squash halves are a delicious and festive fall dish. They are perfect for a special occasion or a weeknight meal. With a little planning, you can easily make this dish ahead of time. Simply cook the squash and apples separately and then assemble the squash halves just before serving.
