Time 50m

Yield 4 dumplings

Number Of Ingredients 13

1 sheet frozen puff pastry, such as Pepperidge Farm, thawed
4 small tart apples
1/2 cup packed brown sugar
1/4 cup raisins
2 tablespoons chopped pecans
1/2 teaspoon ground cinnamon
Zest and juice of 1 lemon
4 teaspoons butter
1 large egg whisked with 1 tablespoon water, for the egg wash
1/2 cup confectioners' sugar
2 tablespoons butter
1 teaspoon lemon juice
Vanilla ice cream, for serving

Steps:

  • For the dumplings: Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • Roll the pastry into a 12-inch square and cut into four 6-inch squares. Peel and core the apples, then place 1 on each square of pastry.
  • Add the brown sugar, raisins, pecans, cinnamon and lemon zest and juice to a bowl and mix. Pile some of the mixture into the hollowed-out core of each apple. Top each with a teaspoon of butter. Egg wash the edges of the pastry squares, then bring the corners of each pastry square up and fold over each apple, pressing to seal the dumplings.
  • Transfer the dumplings to the prepared baking sheet and brush with the remaining egg wash. Bake until the apples are tender and the pastry is golden brown, about 30 minutes.
  • For the glaze: Add the confectioners' sugar, butter, lemon juice and 1/4 cup water to a small pan over medium heat. Cook, stirring, until the butter is melted and the sugar is dissolved, about 5 minutes.
  • Brush the glaze over the baked dumplings and serve with vanilla ice cream.

OLD-FASHIONED APPLE DUMPLINGS

Old-Fashioned Apple Dumplings image

These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

Time 1h30m

Yield 6

Number Of Ingredients 9

1 recipe pastry for double-crust pie
6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
  • With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
  • In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
  • Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

Tips:

  • Choose the right apples: Firm, tart apples like Granny Smith or Honeycrisp hold their shape well during baking.
  • Peel and core the apples neatly: Use a sharp knife to make clean cuts, leaving the apples intact.
  • Roll the dumplings tightly: This will prevent the filling from leaking out during baking.
  • Use a large pot or Dutch oven: Make sure there is enough room for the dumplings to expand as they cook.
  • Simmer the dumplings gently: Do not boil them, as this will make the dough tough.
  • Serve the dumplings warm with your favorite toppings: Butter, cinnamon sugar, ice cream, or whipped cream are all delicious options.

Conclusion:

Pioneer Woman's Apple Dumplings are a classic comfort food that is easy to make and always a hit. With a few simple ingredients and a little time, you can create these delicious dumplings that are perfect for a special occasion or a weeknight meal.
