Time 2h30m

Yield 1 11-inch tart

Number Of Ingredients 14

8 tablespoons unsalted butter, room temperature
1/4 cup plus 1 tbsp. granulated sugar
1 egg yolk
1 2/3 cups cake flour, sifted
1 1/2 lbs tart apples (granny smith)
1 cup fresh cranberries, rinsed and picked over
2 tablespoons all-purpose flour
2 teaspoons all-purpose flour
2/3 cup granulated sugar
1/2 teaspoon cinnamon
1 cup rolled oats
3/4 cup all-purpose flour
2/3 cup light brown sugar (packed)
6 tablespoons unsalted butter, melted

Steps:

  • Make the dough: In a large bowl, using an electric mixer, cream the butter and sugar on medium speed until light and fluffy. Beat in the egg yolk until incorporated. On low speed, mix in the flour until the dough just comes together. Turn out on a lightly floured surface and knead 3 or 4 times to form a smooth ball. Pat the dough into a 6-inch disk. Press the dough evenly into the bottom and up the sides of an 11-inch by 1-inch fluted tart pan with a removable bottom. Prick all over with a fork. Refrigerate for 1 hour.
  • Preheat the oven to 375 degrees. Place the tart shell on a baking sheet and bake for 10-15 minutes, until just starting to color. Set aside.
  • Make the filling: Peel, quarter and core the apples; slice lengthwise 1/4 inch thick. In a bowl, toss the apples and cranberries with the flour. Sir in the sugar and cinnamon. Mound the filling in the tart shell.
  • Make the topping: In a medium bowl, combine the oats, flour and brown sugar. Pour in the butter and crumble the mixture with your fingers. Pile it on the fruit to cover completely.
  • Bake the tart for about 40 minutes, or until the topping is golden, the filling is bubbling and the apples are tender when pierced. (Cover loosely with foil if the top gets too brown too soon). Transfer to a rack to cool. Prep time includes refrigeration time for crust.

1 1/2 lbs tart apples, e.g. Greening or Granny Smith
1 c fresh cranberries

Preheat oven to 375 Place the tart shell on a baking sheet and bake until just starting to color, 10-15 minutes. Cool. 2. Make the filling: Using a small sharp knife, peel, quarter and core the apples. Slice them lenghtwise 1/4 in thick. In a large bowl, toss the apples and cranberries with the flour, sugar and cinnamon. Mound the filling in the tart shell. 3. Make the topping: In a medium bowl, combine the oats, flour and brown sugar. Pour in the butter and crumble the mixture with your fingers. Pile it on top of the fruit filling to cover completely. 4. Bake the tart for 40 minutes, or until the crumb topping is golden, the fruit is bubbling and the apples are tender when pierced with a cake tester. Cover the tart loosely with foil if the top gets too brown before the bubbling begins. Transfer to a rack to cool.

Tips:

- To make the perfect crumb topping, use a combination of flour, sugar, butter, and oats. The butter should be cold and cut into small pieces, and the oats should be old-fashioned. - To prevent the crust from becoming soggy, pre-bake it for 10-15 minutes before adding the filling. - Use a variety of apples for the filling, such as Granny Smith, Honeycrisp, and Braeburn. This will give the tart a complex flavor and texture. - To make the tart ahead of time, bake it and let it cool completely. Then, wrap it tightly in plastic wrap and store it in the refrigerator for up to 3 days. When you're ready to serve, let it come to room temperature for about 30 minutes before slicing.

Conclusion:

Apple crumb tart is a classic dessert that is perfect for any occasion. It's easy to make and can be customized to your liking. With its sweet and tangy filling and buttery crumb topping, this tart is sure to be a hit with everyone who tries it.
