4 pounds assorted apples, such as Golden Delicious, Gala, Honeycrisp or McIntosh (about 8), peeled, cored and chopped
1/4 cup sugar
Kosher salt

1/4 teaspoon ground cinnamon

Steps:

  • Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.

Tips:

  • Choose the right apples: Use firm, tart apples that hold their shape well when cooked, such as Granny Smith, Braeburn, or Honeycrisp.
  • Peel and core the apples evenly: This will help them cook evenly and prevent them from falling apart.
  • Use a sharp knife to cut the apples into uniform pieces: This will also help them cook evenly.
  • Don't overcrowd the pan when cooking the apples: This will prevent them from steaming and becoming mushy.
  • Cook the apples over medium heat: This will help them caramelize and develop a rich flavor.
  • Stir the apples frequently while cooking: This will prevent them from sticking to the pan and burning.
  • Add the oats, sugar, and spices to the apples once they have softened: This will help the oats absorb the apple juices and create a thick, flavorful filling.
  • Bake the apple crows nests until the oats are golden brown and the filling is bubbling: This will take about 25 minutes.
