One 21-ounce can apple pie filling
2 tablespoons cinnamon sugar
2 cups whipping cream, chilled
1 teaspoon ground cinnamon
4 tablespoons sugar

ginger whipped cream as an accompaniment

Steps:

  • Roll out the dough 1/8 inch thick on a lightly floured surface, fit it into a 10-inch (6-cup capacity) pie plate, and flute the edge decoratively. Chill the shell while making the topping and the filling.
  • Make the topping:
  • In a small bowl blend together the butter, the sugar, the cinnamon, and the flour until the mixture is combined well and chill the topping, covered, while making the filling.
  • Make the filling:
  • In a large bowl whisk together the sour cream, the sugar, the salt, the vanilla, the eggs, and the flour until the mixture is smooth, add the apples, peeled, cored, and sliced thin, and stir the filling until it is combined well.
  • Spoon the filling into the chilled shell, smoothing the top, and crumble the topping evenly over it. Bake the pie in the middle of a preheated 350°F. oven for 1 to 1 1/4 hours, or until it is golden and the apples are tender, transfer it to a rack, and let it cool completely. Serve the pie with the ginger whipped cream.

Yield Makes 6 servings

Number Of Ingredients 21

Crust:
2 1/2 cups all-purpose flour
5 tablespoons sugar
3/4 teaspoon salt
3/4 teaspoon ground cinnamon
6 tablespoons cold unsalted butter
6 tablespoons cold shortening
4 to 6 tablespoons apple juice
Filling:
2/3 cup sour cream
1/3 cup sugar
1 egg, lightly beaten
1/4 teaspoon salt
1 teaspoon vanilla extract
3 tablespoons all-purpose flour
5 or 6 tart apples, peeled and sliced
Topping:
3 tablespoons brown sugar
3 tablespoons sugar
1 teaspoon ground cinnamon
1 cup chopped walnuts

Steps:

  • 1. Prepare crust: Sift flour, sugar, salt, and cinnamon into a bowl. Cut in the butter and shortening with a fork until the mixture resembles coarse meal. Moisten with just enough apple juice, tossing ingredients lightly with a fork. Form dough into a ball. Wrap and refrigerate for 2 hours.
  • 2. Cut off 1/3 of the dough and return it to the refrigerator. Roll out the other 2/3 between 2 sheets of wax paper. Line a greased 9-inch pie pan with the dough. Trim overhang and crimp decoratively. Preheat oven to 350°F.
  • 3. Whisk all filling ingredients, except apples, in a bowl. Add apples, then spoon into the pastry-lined pie pan. Combine topping ingredients and sprinkle over filling.
  • 4. Roll out the remaining dough between wax paper to form a circle 10 inches in diameter. Cut into strips 1/2-inch wide and arrange lattice-fashion over apples; trim ends of strips and crimp edges decoratively.
  • 5. Bake pie in the center of the oven until the juices are bubbling and the apples are tender, about 55-60 minutes. (Cover loosely with foil if the crust browns too quickly.) Serve warm or cooled.

Tips:

  • Use a combination of Granny Smith and Honeycrisp apples for a tart and sweet flavor.
  • Peel and slice the apples thinly and evenly so they cook evenly.
  • Don't overcook the apples; they should still be slightly firm.
  • Use a deep-dish pie plate to prevent the filling from bubbling over.
  • Brush the edges of the pie crust with egg wash before baking to create a golden crust.
  • Serve the pie warm with a scoop of vanilla ice cream or whipped cream.

Conclusion:

Apple cream pie is a classic dessert that is perfect for any occasion. With its flaky crust, creamy filling, and sweet-tart apples, this pie is sure to be a hit with everyone. Follow these tips to make the best apple cream pie possible.
