Steps:
- 1. Mix flour, baking soda, and salt. In a separate large bowl, blend brown sugar, sugar, and butter with an electric mixer on medium speed, scraping down the sides of the bowl. Add eggs and vanilla, then beat at medium speed until light and fluffy. Add the flour mixture and blend at low speed until just combined. Do not over mix.
- 2. Shape dough into marble-size balls. Place balls onto ungreased cookie sheet, about 1 inch apart. Bake 10 to 11 minutes at 300 degrees , but do not let them brown. Transfer cookies to a cool, flat surface.
- 3. Filling: Blend cream cheese and sugar on medium speed until fluffy. Add apple butter and beat until smooth and thoroughly combined. Spread 1 teaspoon of filling onto the flat side of a cookie. Top with another cookie to create a sandwich. Repeat with remaining cookies and filling.
Tips:
- Use a variety of apples: Different apples will give your pennies a different flavor and texture. For example, Granny Smith apples are tart and crisp, while Honeycrisp apples are sweet and juicy.
- Peel the apples thinly: This will help the pennies to cook evenly.
- Use fresh cream: Fresh cream will give your pennies a richer flavor than milk.
- Don't overcook the pennies: They should be cooked until they are just tender, but not mushy.
- Serve the pennies warm: They are best enjoyed fresh out of the oven.
Conclusion:
Apple cream pennies are a delicious and easy-to-make dessert that is perfect for any occasion. They are made with simple ingredients that you probably already have on hand, and they can be ready in less than an hour. So next time you're looking for a sweet treat, give apple cream pennies a try!
