APPLE CHIPS

Apple Chips image

The simple syrup really makes a difference with these apple chips. It makes them shiny and more crispy. You can reuse the syrup to sweeten tea or make another batch of apple chips.

Provided by Alex Guarnaschelli

Categories     appetizer

Time 13h15m

Yield 4 servings

Number Of Ingredients 4

2 cups water
1 1/2 cups sugar
2 to 3 lemons, juiced
2 small apples, preferably a crisp, flavorful variety like Royal Gala or Winesap, washed and dried

Steps:

  • In a small pot, combine the water and sugar and bring to a gentle boil over medium heat. Set aside to cool.
  • Place the apples on a flat surface. Using a mandoline or sharp knife, cut each one, placing the core end of the apple in front of the blade, into rounds as thin as you can manage. Remove any seeds as you cut and sprinkle them with lemon juice. Submerge the apple slices in the syrup and allow them to "rest" for a few hours or, even better, overnight.
  • Preheat the oven to 200 degrees F.
  • Remove some of the apples from the syrup and lightly dry them on a kitchen towel. Place them in a single layer on a baking sheet with parchment or on a tray fitted with a baking rack. Note: you may want to place something heavy, like a metal spoon, at each end of the paper to prevent the paper from folding over as the chips bake. Bake in the oven until crispy, about 1 hour.

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for potato chips because they are starchy and have a low moisture content. This makes them crispy and flavorful when fried.
  • Slice the potatoes thinly: The thinner the potato slices, the crispier the chips will be. Aim for slices that are about 1/8-inch thick.
  • Soak the potato slices in water: This removes excess starch from the potatoes, which helps them crisp up better. Soak the slices in cold water for at least 30 minutes, or up to overnight.
  • Dry the potato slices thoroughly: Before frying the potato slices, make sure they are completely dry. This will help them crisp up evenly.
  • Use a high-quality oil for frying: A good oil for frying potato chips is one with a high smoke point, such as vegetable oil, canola oil, or grapeseed oil. Avoid using olive oil, as it has a low smoke point and can burn easily.
  • Fry the potato slices in batches: Do not overcrowd the pan when frying the potato slices. This will cause them to steam instead of fry, and they will not be as crispy. Fry the slices in batches, in a single layer, until they are golden brown and crispy.
  • Season the potato chips immediately: As soon as the potato chips come out of the fryer, season them with salt and other desired seasonings, such as pepper, garlic powder, or paprika. This will help the seasonings stick to the chips.
  • Let the potato chips cool completely before serving: Allow the potato chips to cool completely on a wire rack before serving. This will help them crisp up even more.

Conclusion:

Potato chips are a delicious and versatile snack that can be enjoyed on their own or used as an ingredient in other dishes. Making potato chips at home is easy and rewarding, and you can customize them to your own taste. With a little practice, you can make perfect potato chips every time.
