Time 4h5m

Number Of Ingredients 11

Two Crust Pie Shell (Helen's Two-Crust Pie Pastry) (recipe below)
1 cup sugar
⅓ cup all-purpose flour
½ teaspoon ground cinnamon
2 pounds tart cooking apples, peeled, cored and cut into 1/4-inch slices (5- 1/2 cups)
2 cups cranberries
½ cup chopped walnuts
2 tablespoons butter, cut into small pieces
Milk
Sugar or coarse sugar
1 tablespoon chopped walnuts

Steps:

  • Prepare and roll out Two Crust Pie Shell pastry. Line a 9-inch pie plate with half of the pastry.
  • In a small bowl, stir together 1 cup sugar, 1/3 cup flour and 1/2 teaspoon cinnamon. In a large bowl combine the apples, cranberries (reserving 1 cranberry for the garnish) and 1/2 cup walnuts. Sprinkle sugar mixture over the fruit. Toss to combine. Spoon mixture into pastry-lined pie plate. Dot with butter.
  • Cut slits in remaining pastry to allow steam to escape. Place pastry on filling. Trim both overhangs to an even 1 inch all the way around. Tuck the crusts under and flute the edges. Lightly brush pastry with a little milk and sprinkle with additional sugar. Cut a slit in center of pastry; place the 1 reserved cranberry in slit. Sprinkle the 1 tablespoon walnuts around the cranberry. To prevent overbrowning, cover edge of pie with foil.
  • Place pie plate on middle shelf in oven; place foil-lined baking sheet on lower rack beneath pie. Bake in a 325°F. oven for 1 hour. Remove foil. Bake 30 to 45 minutes more or until fruit is tender, filling is bubbly and crust is golden brown. Cool on a wire rack at least 2 hours before serving.

Provided by Marian Arbour

Categories     Fruit Desserts

Time 1h

Number Of Ingredients 13

1 c walnut halves
1/3 c granulated sugar
2 c all purpose flour
1/2 c butter, cubed
2 eggs, divided
1 tsp vanilla extract

1/3 c packed brown sugar
1/2 tsp cinnamon, ground
5 sweet apples such as royal gala, peeled, cored and sliced into1/4 inch slices
2 c fresh or frozen cranberries
2 Tbsp all purpose flour

Steps:

  • 1. In food processor pulse walnuts until coarsley chopped, add sugar and flour, pulse until fine. add butter pulse until combined and crumbly, add one egg and vanilla and pulse until dough sticks together about 19 seconds...if dough is not holding together, add 1 to 2 tsps cold water and pulse til dough sticks together.. press dough into a ball and divide into 2 portions, one third and 2 thirds wrap in saran and refrigerate for 15 minutes.
  • 2. Press larger piece of dough into bottom of a 9 inch pie pan and flute the edges and refrigerate for 15 minutes.
  • 3. For the filling in large skillet over medium heat melt butter, add brown sugar, cinnamon, apples and cranberries, stir and cook until apples are tender-crisp and juicy and cranberries pop 8 to 10 minutes, stir flour into apple mixture and cook for 2 minutes until juices are thickened. pour mixture into chilled pie crust and spread evenly.
  • 4. Preheat oven to 375F and on lightly floured surface roll out top crust and place over pie filling and crimp the top and bottom crust..beat the egg and brush over crust and cut several slits into pie crust to let steam escape while baking, bake for 35 to 40 minutes until crust is golden...remove from oven to cool..serve with a dollop of icecream.

Tips:

  • Choose the right apples: Use a variety of apples that will hold their shape when baked, such as Granny Smith, Honeycrisp, or Braeburn.
  • Use fresh cranberries: Fresh cranberries are available in the fall and winter months. If you can't find fresh cranberries, you can use frozen cranberries, but thaw them completely before using.
  • Make the walnut crust ahead of time: The walnut crust can be made up to 3 days in advance. Just wrap it tightly in plastic wrap and store it in the refrigerator.
  • Blind bake the crust: Blind baking the crust helps to prevent it from becoming soggy. To blind bake the crust, preheat the oven to 350°F (175°C). Line the crust with parchment paper and fill it with pie weights or dried beans. Bake for 15-20 minutes, or until the crust is golden brown.
  • Don't overfill the pie: Overfilling the pie will make it difficult to seal and may cause the filling to spill over. Fill the pie crust no more than 3/4 full.
  • Let the pie cool completely before serving: This will allow the filling to set and the crust to crisp up.

Conclusion:

This apple cranberry pie with walnut crust is a delicious and festive treat that is perfect for the holidays. The sweet and tart apples, tangy cranberries, and crunchy walnuts are a perfect combination. The walnut crust is also a nice change from the traditional pastry crust. With just a few simple tips, you can make this pie like a pro. So go ahead and give it a try!
