4 medium tart cooking apples, peeled, sliced (about 4 1/2 cups)
2 Gala apples, peeled, sliced (about 2 cups)
2 cups fresh or frozen (do not thaw) cranberries
1 cup packed brown sugar
3 tablespoons Gold Medal™ all-purpose flour
3 tablespoons cold butter, cut into 6 pieces
2 tablespoons lemon juice
2 teaspoons grated gingerroot
1 1/2 teaspoons ground cinnamon
1 cup Gold Medal™ all-purpose flour
1/2 cup quick-cooking or old-fashioned oats
1/2 cup packed brown sugar
3 tablespoons finely chopped crystallized ginger
1/2 cup cold butter or margarine, cut into 8 pieces
1/4 cup chopped walnuts
Vanilla ice cream, if desired

Steps:

  • In large bowl, mix all filling ingredients. Let stand 30 minutes.
  • Heat oven to 400°F. Spray 13x9-inch pan with cooking spray. Spoon apple mixture into pan.
  • In medium bowl, mix 1 cup flour, the oats, 1/2 cup brown sugar and the ginger. Cut in 1/2 cup butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly. Stir in walnuts. Sprinkle evenly over apples.
  • Bake 40 minutes or until apples are tender when pierced with fork and topping is golden brown. Serve with ice cream.

3 lb apples
3 Tbsp lemon juice
1/3 c maple syrup
1/3 c all purpose flour
1/2 c dried cranberries
2 Tbsp crystallized ginger, finely chopped
1/4 tsp cinnamon
CRISP TOPPING
1 stick cold butter, cubed
1 c all purpose flour
1 c oats
1 c light brown sugar

Steps:

  • 1. Combine all crisp topping ingredients in a medium bowl and incorporate them with a fork until small balls the size of peas have formed. Set aside.
  • 2. Preheat the oven to 350 degrees F.
  • 3. Wash, core, peel and cut the apples into 1/4" slices. Sprinkle slices with a little lemon juice to keep them from browning. In a large bowl, mix all other filling ingredients together, mixing well.
  • 4. Spread the filling mixture into an even layer in a lightly greased 9x13x2" baking dish. Spread the crisp topping in an even layer over the filling. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 25 minutes or until bubbly and golden brown.
