Tips:

  • Choose the right apples: Use firm, tart apples like Granny Smith or Honeycrisp. They hold their shape well and provide a nice contrast to the sweet cranberries and creamy chicken.
  • Don't overcook the chicken: Chicken should be cooked through but still tender and juicy. Overcooked chicken will be dry and tough.
  • Use high-quality mayonnaise: Mayonnaise is the base of the salad, so it's important to use a good-quality brand. Look for mayonnaise made with cage-free eggs and no added sugar.
  • Add some crunch: To add some crunch to the salad, add chopped walnuts, pecans, or celery.
  • Make it ahead: Chicken salad can be made ahead of time and stored in the refrigerator for up to 3 days. This makes it a great option for busy weeknights.

Conclusion:

Apple cranberry chicken salad is a delicious, easy-to-make salad that is perfect for lunch or dinner. It's also a great way to use up leftover chicken. With its sweet, tart, and creamy flavors, this salad is sure to be a hit with everyone at the table.
