1 c water
1 c couscous, uncooked
3 apples, cored and diced
1/4 c brown sugar, packed
2 Tbsp cinnamon
1/4 c butter
1/2 c chopped pecans
1/4 c raisins

Steps:

  • 1. Prepare couscous according to package directions.
  • 2. In a large frying pan, melt butter over medium heat. In a medium bowl combine apples, brown sugar and cinnamon until apples are coated. Add apples to butter in pan.
  • 3. Cover and cook on low for 10 minutes or until apples are starting to get tender. Add pecans, cook a little longer. Add raisins and cooked couscous until combined. Top with additional brown sugar, if desired. Serve warm

Tips:

  • Choose the right couscous: For this recipe, it's best to use a medium-grain couscous, as it will hold its shape better than fine-grain couscous.
  • Toast the couscous: Toasting the couscous before cooking it helps to bring out its nutty flavor. Be sure to stir the couscous constantly while toasting to prevent it from burning.
  • Use a flavorful broth: The broth you use to cook the couscous will greatly affect the flavor of the dish. For a more flavorful couscous, use a broth made with vegetables, chicken, or beef.
  • Add vegetables and fruits: Vegetables and fruits add sweetness, crunch, and color to the couscous. For this recipe, apples, carrots, and raisins are used, but you can use any vegetables or fruits that you like.
  • Season the couscous: Be sure to season the couscous with salt and pepper to taste. You can also add other spices, such as cumin, coriander, or paprika.

Conclusion:

Apple couscous is a delicious and versatile dish that can be served as a main course or a side dish. It's a great way to use up leftover apples, and it's also a healthy and flavorful dish. With its combination of sweet apples, crunchy carrots, and nutty couscous, this dish is sure to please everyone at your table.
