APPLE PIE CORDIAL
Now I always have apple pie in my frig. ;-) This cordial is so easy to make and it really does taste like apple pie. I made a few batches around the holidays. I put it in pretty bottles and gave it as hostess gifts. Everyone loves it.

Steps:
- 1. Place apples and cinnamon in a large glass container that has a tight fitting lid.
- 2. Add vodka to apples and cinnamon.
- 3. Make the simple syrup. I combine the water and sugar in a 2 cup pyrex measuring cup and microwave it until the sugar is disolved.
- 4. Let the simple syrup cool and then add to vodka.
- 5. Shake well.
- 6. Let mixture sit for approximately 4 days. Shake the mixture twice daily.
- 7. Remove the apples and cinnamon sticks.
- 8. The cordial needs to be strained to remove all the residue. Coffee maker filters work well. Strain through coffee filters until the cordial is nice and clear.
- 9. NOTE: Be sure to dampen coffee filters first. Place them in a strainer and pour liquid through the filter a little at a time. This is a time consuming process. You may have to strain it 3-4 times. I've actually opened up the filters and lined a small collender with them and then poured the liquid through.
- 10. You can store the cordial in an empty vodka bottle or put it in little bottles to give as gifts. Keep in frig.
HOMEMADE APPLE LIQUEUR OR APPLE SPICE LIQUEUR

- 1. 2 1/2 pounds apples 2 cups vodka 2 cups brandy 1 1/2 cups sugar 3/4 cup water Cut apples into wedges, put in jar. Pour vodka and brandy over apples. Cap and age in a cool place for one month. Strain and filter. Combine sugar and water, boil, cool. Combine liqueur and syrup into aging container, age for a month. Strain as needed. Variation: Spiced apple. Add two cinnamon sticks, 10 whole cloves, remove spices when filtering/squeezing apples. *I used a very large pickle jar to age the liqueur. You can buy decorative empty bottles from any beer making store. I used large canning jars and decorated the tops.
- 2. Cut apples into wedges, put in jar. Pour vodka and brandy over apples. Cap and age in a cool place for one month. Strain and filter. Combine sugar and water, boil, cool. Combine liqueur and syrup into aging container, age for a month. Strain as needed.
- 3. Variation: Spiced apple. Add two cinnamon sticks, 10 whole cloves, remove spices when filtering/squeezing apples.
- 4. *I used a gallon sized canning jar to age the liqueur. You can buy decorative empty bottles from any beer making store. I used pint canning jars and decorated the tops to give as gifts.
- 5. Gift basket A wonderful addition to a wine set with wine decanter. Then tuck in some aged cheese and homemade crackers.
