Time 1h15m

Yield 12 servings

Number Of Ingredients 17

1 stick plus 2 teaspoons unsalted butter
1 1/2 cups packed light brown sugar
2 large eggs
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup sour cream
1 teaspoon pure vanilla extract
2 cups peeled, cored and chopped apples
1/2 cup packed light brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, softened
1/2 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
  • In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
  • To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
  • To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.

APPLE CRUMBLE COFFEE CAKE

Apple Crumble Coffee Cake image

Finally, after all these years, I've come up with a solution for people who can't decide whether to make an apple crumble or coffee cake. This features the best things about both of those recipes. It's like baking a crumb-topped coffee cake on top of another coffee cake!

Provided by Chef John

Categories     Desserts     Fruit Dessert Recipes     Apple Dessert Recipes

Time 1h35m

Yield 8

Number Of Ingredients 17

2 teaspoons unsalted butter
2 cups all-purpose flour
½ teaspoon fine sea salt
1 teaspoon baking powder
¾ teaspoon baking soda
1 ½ cups finely chopped toasted walnuts
⅓ cup packed light brown sugar
⅓ cup white sugar
¼ teaspoon salt
1 teaspoon ground cinnamon
3 tablespoons unsalted butter, melted
½ cup unsalted butter, at room temperature
1 cup white sugar
2 large eggs
1 ½ teaspoons vanilla extract
1 cup plain yogurt
2 each Honeycrisp apples

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish generously.
  • Whisk flour, sea salt, baking powder, and baking soda together in a bowl. Set aside.
  • Combine walnuts, brown sugar, white sugar, salt, cinnamon, and melted butter in a bowl. Mix until walnuts and sugar are thoroughly coated with butter.
  • Cream butter and sugar together in another bowl with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla extract and yogurt; whisk together. Add flour mixture to wet ingredients; whisk just until flour disappears. Do not overmix.
  • Remove cores from apples. Cut across into 1/8- to 1/4-inch slices. Stack up a few slices, make 1 cut down the center, and dice across into cubes. Add to cake batter, folding in with a spatula until just combined.
  • Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
  • Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

Tips:

  • Choose the Right Apples: Use a variety of apples that offer a balance of sweet and tart flavors, such as Granny Smith, Honeycrisp, or Pink Lady.
  • Prep the Apples Properly: Peel and slice the apples evenly to ensure uniform cooking. For a finer texture, grate the apples.
  • Use Quality Ingredients: Always opt for fresh, high-quality ingredients to guarantee the best flavor and texture.
  • Don't Overmix the Batter: Overmixing can result in a tough, dense cake. Mix the batter just until the ingredients are combined.
  • Bake at the Right Temperature: Ensure your oven is preheated to the correct temperature before baking. The ideal temperature for this recipe is 350°F (175°C).
  • Prevent Sticking: Grease and flour the cake pan thoroughly to prevent the cake from sticking.
  • Check for Doneness: Insert a toothpick or skewer into the center of the cake. If it comes out clean, the cake is done.
  • Let it Cool: Allow the cake to cool completely before serving. This helps the flavors develop and ensures the cake retains its shape.
  • Store Properly: Store leftover cake in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.

Conclusion:

With its moist, tender crumb, sweet-tart apple filling, and crunchy streusel topping, this Apple Coffee Cake Supreme is a delightful treat that combines the classic flavors of fall into one irresistible dessert. Whether served as a breakfast pastry, afternoon snack, or special occasion treat, this cake is sure to impress with its irresistible aroma and mouthwatering flavor.
