Time 1h15m

Yield 2 servings

Number Of Ingredients 12

1 large Honeycrisp or 2 Gala apples (about 12 ounces), peeled, cored and cut into 1/4-inch pieces (2 generous cups)
2 heaping tablespoons plus 1 teaspoon sugar
1 teaspoon all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
1 tablespoon cold unsalted butter, cut into small pieces
1/4 cup all-purpose flour
Heaping 1/4 teaspoon baking powder
Pinch fine salt
2 teaspoons sugar
3 tablespoons heavy cream
2 small scoops vanilla ice cream, for serving

Steps:

  • For the filling: Preheat the oven to 400 degrees F. Toss the apples with 2 heaping tablespoons of the sugar, the flour, cinnamon and nutmeg. Add the butter, and toss. Divide the filling between two 6-ounce, 3 1/2-inch ramekins, tent each loosely with foil and bake until the apples are tender and the juice is bubbling, about 35 minutes. Remove the ramekins from the oven, remove the foil, give the apples barely a stir with a fork and press the top into the juices.
  • For the topping: Whisk together the flour, the baking powder, salt and 1 teaspoon of the sugar in a small bowl. Quickly stir in the heavy cream, then work the dough with your fingers as if you were working butter into pie dough, to make moist, slightly flattened chunks of dough.
  • Top each ramekin with dough, dividing evenly. Sprinkle each with 1/2 teaspoon of the remaining sugar, and bake until the topping is browned and crisp, 12 to 15 minutes. Let cool slightly, top with ice cream and serve.

Categories     Breakfast

Time 30m

Yield 2-4 serving(s)

Number Of Ingredients 10

2 cups tart apples, sliced and peeled
3 tablespoons brown sugar
1 teaspoon lemon juice
1/4 teaspoon ground cinnamon
1/3 cup flour
1 tablespoon sugar
1 teaspoon baking powder
3 tablespoons milk
2 tablespoons butter or 2 tablespoons margarine, melted
half-and-half (optional)

Steps:

  • Gently toss the apples, brown sugar, lemon juice, and cinnamon. Divide between two greased 10 oz custard cups or four 5 oz ramikens.
  • In a bowl combine flour, sugar, and baking powder; stir in milk and butter - just until moistened. Spoon over apples.
  • Sprinkle with sugar and cinnamon, if desired for a whole different look and slightly sweet flavor.
  • Bake at 400 degrees for 20 min or until the top is goldern brown. Serve with cream if desired.

Tips:

  • Choose the right apples: For the best flavor and texture, use a combination of tart and sweet apples, such as Granny Smith, Honeycrisp, or Braeburn.
  • Peel and slice the apples thinly: This will help them cook evenly and quickly.
  • Use a good quality butter or margarine: This will give the cobbler a rich, buttery flavor.
  • Don't overmix the batter: Overmixing will make the cobbler tough.
  • Bake the cobbler until the topping is golden brown and the apples are bubbling: This will ensure that the cobbler is cooked through.
  • Let the cobbler cool for a few minutes before serving: This will help the filling set and prevent it from being too runny.

Conclusion:

Apple cobbler is a classic dessert that is easy to make and always a crowd-pleaser. With its sweet and tart apples, buttery crust, and warm spices, it's the perfect comfort food for any occasion. Whether you're making it for a special occasion or just a weeknight treat, this apple cobbler recipe is sure to be a hit.
