Steps:
- 1. Preheat oven to 350 Mix wet ingredients = sugar, vanilla, eggs and oil (I used a fork)
- 2. In separate bowl measure dry ingredients = baking soda, baking powder, cinnamon and flour (you could add salt but I do not cook or bake with salt if you did add I would not add over a 1/2 tsp) I used a fork to mix this all in as well.
- 3. fold in shredded apple and zucchini
- 4. Use a 12 cup cake pan and an ice cream scoop to make all even sizes. put in paper liners spray liners with PAM or they stick bake for 25 mins at 350 test by pushing on tops, they should hold shape and not sink in when done.
Tips:
- Prep Your Zucchini: For best results, use a box grater with the largest holes to grate the zucchini. This will help release the most moisture and prevent the muffins from becoming too dense.
- Don't Overmix the Batter: Overmixing can result in tough muffins. Mix the batter until just combined, and be careful not to overbeat the egg whites if you're using them.
- Fill the Muffin Cups Properly: Fill the muffin cups about 2/3 full. This will allow the muffins to rise properly without overflowing.
- Bake until a Toothpick Inserted Comes Out Clean: This is the best way to ensure that the muffins are cooked through. Insert a toothpick into the center of a muffin; if it comes out clean, the muffins are ready.
- Let the Muffins Cool Before Frosting: If you're planning on frosting the muffins, let them cool completely first. This will help the frosting set properly.
