1 ½ cups all-purpose flour
¾ cup white sugar
½ teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
⅓ cup vegetable oil
1 egg
⅓ cup milk
2 apples - peeled, cored and chopped
½ cup white sugar
⅓ cup all-purpose flour
½ cup butter, cubed
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
  • Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
  • In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.

12 frozen dinner rolls (such as Rhodes®)
cooking spray
½ cup white sugar
½ cup brown sugar
3 tablespoons ground cinnamon
¼ cup butter, melted
2 apple - peeled, cored, and chopped
¼ cup golden raisins
½ cup cream cheese, at room temperature
½ cup confectioners' sugar
3 tablespoons heavy whipping cream, or more as needed
1 teaspoon vanilla extract

Steps:

  • Put frozen rolls on a baking sheet, spray a piece of plastic wrap with cooking spray and place over rolls. Let rise until doubled in size, about 3 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Line a muffin tin with paper liners.
  • Mix white sugar, brown sugar, and cinnamon together in a bowl. Place melted butter in a small bowl.

2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 cup sugar substitute
1/4 cup egg substitute
3 tablespoons corn oil
1/2 cup skim milk
1 cup applesauce, unsweetened
1/2 cup raisins, washed, drained

Steps:

  • Mix dry ingredients in mixing bowl. Beat egg substitute and whip in oil, milk, and applesauce. Add to dry ingredients and mix until flour is just moistened. Stir in raisins. Fill muffin tins 2/3 full. Bake for 25 minutes at 400 degrees. Remove muffins from tins immediately. Makes 12 servings.

1-1/2 cups all-purpose flour
1/2 cup sugar
1-3/4 teaspoons baking powder
1/2 teaspoon salt

1/8 teaspoon ground nutmeg
1 egg
1/2 cup milk
3 tablespoons vegetable oil
3 tablespoons applesauce
1 medium tart apple, peeled and grated
TOPPING:
1/4 cup packed brown sugar
1 tablespoon all-purpose flour
2 tablespoons cold butter
1/2 cup old-fashioned oats
1/4 cup finely chopped nuts

  • In a bowl, combine the first six ingredients. In another bowl, combine the egg, milk, oil and applesauce. Stir into dry ingredients just until moistened. Fold in apple.
