Tips:

  • Use ripe apples for the best flavor. Granny Smith, Honeycrisp, and Pink Lady are all good choices.
  • Be sure to peel and grate the apples before adding them to the batter. This will help them to distribute evenly and cook through.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of regular milk. Let it sit for 5 minutes before using.
  • Don't overmix the batter. Overmixing can make the muffins tough.
  • Fill the muffin cups about 2/3 full. This will help to prevent them from overflowing.
  • Bake the muffins until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

These apple cinnamon oatmeal muffins are a delicious and healthy way to start your day. They're packed with flavor and nutrients, and they're easy to make. So next time you're looking for a quick and easy breakfast or snack, give these muffins a try. You won't be disappointed.
