Time 3h40m

Yield 20-25 empanadas

Number Of Ingredients 16

1 cup butter, chilled (16 tablespoons, or 2 sticks)
8 ounces cream cheese, chilled
2 1/3 cups flour
1 tablespoon sugar
1 teaspoon salt
1 teaspoon vanilla
2 tablespoons butter
4 -5 firm green apples (like Granny Smith)
1/2 cup sugar

  • Be careful not to overcook the apples. They should be softened but still hold their shape.
  • If you don't have a pastry brush, you can use a spoon to brush the egg wash onto the empanadas.
  • Make sure to seal the empanadas well so that the filling doesn't leak out.
  • Don't overcrowd the empanadas in the baking dish. Leave some space between them so that they can cook evenly.
