I created this macaroni salad one day when I was cleaning our my refrigerator and had some cabbage, carrots, apples and apple cider dressing I had to use. - 1. In a large bowl, combine the cooked macaroni, onion, celery, hard cooked eggs, cabbage, apple, peas and carrots. Toss gently to combine.
- 2. In a medium bowl, combine the apple cider dressing, Miracle Whip, sugar, salt and vinegar. Mix well. (If you can't find apple cider dressing .... I use Ken's ..... substitute apple juice concentrate and Miracle Whip and proceed as written)
- 3. Pour dressing over pasta mixture and toss to coat.
- 4. Cover and refrigerate for 1-2 hours before serving.
