¼ cup unsalted butter, at room temperature
¼ cup butter-flavored shortening
⅔ cup white sugar
2 eggs
1 ⅔ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon salt
⅛ teaspoon ground nutmeg
1 cup apple cider
2 apples - peeled, cored, and diced small

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 8 muffin cups with paper liners.
  • Cream butter, shortening, and sugar in a stand mixer at medium-high speed. Add eggs, one at a time, mixing well after each addition and scraping down sides of the bowl as necessary.

1-1/3 cups buttermilk
2-2/3 cups all-purpose flour

2 cups chopped peeled apples
1 medium apple, peeled and cut into 24 slices
TOPPING:
1/3 cup all-purpose flour
1/4 cup packed brown sugar

2 tablespoons cold butter

2 tsp baking powder
1/4 tsp salt
1 large egg
1 small apple, diced
3/4 c apple cider or apple juice
1/4 c cooking oil
STREUSEL:
1/3 c packed brown sugar
3 Tbsp flour
2 tsp cinnamon
3 Tbsp cold butter

Steps:

  • 1. How to Make it: Preheat your oven to 350° FOR STREUSEL: Stir brown sugar, flour, and cinnamon in small bowl. Cut in butter with a pastry blender. Set aside.
  • 2. FOR MUFFINS: Lightly oil twelve 2 1/2-inch muffin cups or line with paper baking cups; or 6 Jumbo Muffin Cups set aside.
  • 3. In a medium mixing bowl stir together flour, granulated sugar, baking powder, and salt. Make a well in the center.

1 c butter
1 1/2 c sugar,reserving aside 1/4 of a cup in a small bowl
3 eggs
4 c flour
1 1/2 tsp baking powder
1 1/2 tsp salt
1 1/2 tsp cinnamon
2 c apple cider
2 c apples,peeled,cored and chopped
1 tsp additional cinnamon..add this to the 1/4c reserved sugar in your small bowl.

Steps:

  • 1. Preheat oven to 375 degrees.Grease and flour either two loaf pans... or 18 muffin cups(I've used paper muffin tin liners without incident).
  • 2. Cream butter with...ALL BUT ...1/4 c,of the sugar. Set this 1/4 c of sugar aside,in a separate small bowl,mixed with the final teaspoon of cinnamon listed last,for later use.
  • 3. Add and mix well,the eggs to the creamed butter and sugar. Sift and add the remaining dry ingredients, alternating with the apple cider.Fold in the apples last.
  • 4. Divide the batter for either loaf pans or muffins. Now take the sugar/cinnamon mix previously set aside in your small bowl,and sprinkle this atop of the loaves or muffins,before going into the oven.
  • 5. Bake at 375 degrees...50-70 min's for bread.. OR for 30-40 min's for the muffins.A toothpick inserted in center apparently comes out clean when all is done. Once it's done,let's see if you can let it alone,for 24 hours,so as to improve it's flavor!Just sayin what the recipe says,folks!
