Time 1h35m

Yield about 5 cups

Number Of Ingredients 5

4 pounds assorted apples, such as Golden Delicious, Gala, Honeycrisp or McIntosh (about 8), peeled, cored and chopped
1/4 cup sugar
Kosher salt
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon ground cinnamon

Steps:

  • Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
  • Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
  • Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

Categories     Snacks

Time 45m

Number Of Ingredients 8

12 apples (I love Gala)
1 cup brown sugar
3/4 cup apple cider
2 Tbsp ground cinnamon
1 tsp ground nutmeg
1 tsp salt
1 1/2 tsp vanilla
juice from half of a lemon (about 1 tsp)

Steps:

  • Peel and core the apples. Chop into thin slices.
  • Place apples into a large pot.
  • Stir in remaining ingredients, making sure apples slices are evenly coated.
  • Cook apples over medium heat, stirring occasionally, until the apples are soft. Approximately 25-30 minutes. If the liquid cooks down too much, stir in additional apple cider, 1/4 cup at a time.
  • Using a potato masher, carefully mash the apples until they are no longer recognizable slices.
  • Stir the applesauce and continue cooking until desired consistency is reached.
  • Remove from heat and give the apples one final mash to break up any remaining larger chunks.
  • Cool and enjoy!

Tips:

  • Choose the right apples: Use a mix of sweet and tart apples for the best-balanced flavor. Some good options include Granny Smith, Honeycrisp, and Pink Lady.
  • Peel and core the apples: This is essential for a smooth applesauce. If you don't have time to peel the apples, you can use a potato peeler to remove the skin.
  • Add spices and seasonings to taste: Ground cinnamon, nutmeg, and cloves are classic apple pie spices that work well in applesauce. You can also add a pinch of salt to balance the sweetness of the apples.
  • Cook the applesauce until it reaches your desired consistency: If you like chunky applesauce, cook it for a shorter amount of time. If you prefer a smooth applesauce, cook it for longer.
  • Enjoy applesauce warm or cold: Applesauce is delicious served warm or cold. You can eat it on its own, or use it as a topping for pancakes, waffles, or yogurt.

Conclusion:

Apple cider applesauce is a delicious and versatile dish that can be enjoyed by people of all ages. It's a great way to use up extra apples, and it's also a healthy and nutritious snack. With just a few simple ingredients and a little bit of time, you can make a delicious batch of apple cider applesauce that the whole family will love.
