1 c butter, softened
1 1/4 c dark brown sugar, packed
3 large eggs
2 tsp vanilla extract
2 c flour
1 tsp salt
1 tsp baking soda
2 tsp cinnamon
3/4 tsp nutmeg
1/2 tsp cloves or allspice
2 1/4 c quick cooking oatmeal
1 1/2 large granny smith apple, peeled and diced small (eat other 1/2 or use 2 medium)
1 bag(s) cinnamon chips, 10 oz.
1 1/2 c chopped walnuts
glaze or white chocolate for garnish

Steps:

  • 1. Heat oven to 350 degrees. Prepare cookie sheets with parchment paper.
  • 2. In mixer bowl cream butter and brown sugar; about 2 minutes.
  • 3. Beat in egg and vanilla.
  • 4. Sift flour, cinnamon, nutmeg, cloves, baking soda, and salt.
  • 5. Mix flour mixture into creamed mixture just until blended.
  • 6. Add oatmeal, apples, cinnamon chips and walnuts till blended.
  • 7. Scoop dough onto cookie sheets 2 inches apart. Bake for 10-12 minutes until edges are light brown.
  • 8. Let cool a few minutes and remove to cooling rack to cool completely.
  • 9. Drizzle with melted white chocolate or with a powdered sugar glaze. I used melted white chocolate and it was delicious... Enjoy!

3/4 cup sugar
1 egg
1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup apple, peeled,cored,and grated
1/2 cup quick-cooking rolled oats
3/4 cup semi-sweet chocolate chips

Steps:

  • In a large bowl, cream together margarine and sugar; beat in egg.
  • In seperate bowl, mix flour, baking soda and cinnamon.
  • Stir flour mixture into creamed mixture; stir in apples, chocolate chips and oats.

1/2 cup heavy whipping cream
1 large egg
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup chopped peeled apples
1/2 cup semisweet chocolate chips or butterscotch chips
1 cup chopped nuts
GLAZE:
3 tablespoons butter, melted
1 teaspoon ground cinnamon
2 tablespoons heavy whipping cream
2 cups confectioners' sugar

Steps:

  • In a bowl, cream butter and brown sugar until light and fluffy. Beat in cream and egg. Combine dry ingredients; add to creamed mixture. Fold in the apples, chips and nuts. Drop by teaspoonfuls onto greased baking sheets., Bake at 350° for 12-15 minutes. Do not overbake. Remove to wire racks to cool completely.
