APPLE CRISP OR CHERRY APPLE CRISP

Apple Crisp OR Cherry Apple Crisp image

I've always LOVED Apple Crisp! I got this recipe from my friend, Anita E., around 1977 when we were next-door neighbors. I later experimented & discovered the crisp was perfect with cherry pie filling hiding under it instead of apples. Then came the day I only had 2 1/2 cups of apple slices, but I did have a can of cherry pie...

APPLE CHERRY CRISP

Categories     Fruit     Dessert     Bake     Apple

Yield 8 servings

Number Of Ingredients 6

3 each large Granny Smith and Cortland or McIntosh apples (3 lbs total), peeled, cored and sliced
3/4 cup each packed brown sugar and all-purpose flour
3/4 cup tart dried cherries
1/2 cup apple cider or juice
3/4 stick (6 Tbsp) butter, cut up
1/2 tsp ground cinnamon

Steps:

  • Heat oven to 350 degrees. Have ready a shallow 2-qt baking dish. Mix apples, 2 Tbsp brown sugar, 1 Tbsp flour and the cherries in a large bowl. Transfer to baking dish; pour cider over apple mixture. In same bowl combine remaining brown sugar, remaining flour, the butter and cinnamon until well blended. With pastry blender or fingers, mix until crumbly. Sprinkle evenly over the apples. Bake 50-55 minutes or until top is browned and apples are tender when pierced. Place on a wire rack to cool. Serve warm or at room temperature.

Tips:

  • To ensure the crisp topping is golden brown and crispy, use a combination of oats, flour, and brown sugar. You can also add some chopped nuts or dried fruit for extra flavor and texture.
  • For a sweeter crisp, use a sweeter variety of apples, such as Honeycrisp or Fuji. If you prefer a more tart crisp, use a tarter variety, such as Granny Smith or Braeburn.
  • Don't overcook the crisp. The fruit should be tender but still hold its shape. Overcooking will make the fruit mushy and the crisp topping soggy.
  • Serve the crisp warm with a scoop of vanilla ice cream or whipped cream. You can also top it with a sprinkle of cinnamon or nutmeg.

Conclusion:

Apple cherry crisp is a classic dessert that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. The combination of sweet apples, tart cherries, and a crispy oat topping is simply irresistible. So next time you are looking for a delicious and easy dessert, give this apple cherry crisp a try.
