CREAM CHEESE APPLE OATMEAL BARS
Got this recipe out of a garage sale-find cookbook which was put out by the Crisco Co. It's very versatile in that you can add or subtract topping ingredients as you like. I thought peaches might be interesting to try.

Steps:
- Preheat oven to 350*.
- Combine oats, flour, brown sugar, and 1/4 cup of granulated sugar and mix well. Add Crisco and cut in until it's crumbly. Set aside 1 cup of this mixture and press remainder into a sprayed 9x13 pan.
- Bake for 12 minutes, cool slightly.
- In a mixer bowl, combine cream cheese, eggs, 1/2 cup of sugar, and vanilla. Mix til smooth and spread evenly over oat crust.
- Combine apple, raisins (if desired) and almond extract. Stir.
- Add spices and 2 T. of sugar and sprinkle over cheese mixture.
- Return to oven and bake an additional 25 minutes or til golden. Cool completely and cut into bars.

- Preheat oven to 350 degrees.
- For the crust, in a medium bowl, combine 2 cups flour, butter, 1/2 cup sugar, egg yolks and baking powder.
- Beat with an electric mixer on low to medium speed until combined (mixture will be crumbly).
- Press half of the crumb mixture into the bottom of an ungreased 13x9x2-inch baking pan.
- Bake 10-12 minutes or until crust is lightly browned.
- For filling, in a large bowl combine shredded apples, cheddar cheese, 3/4 cup granulated sugar, 1/4 cup flour and the cinnamon.
- Spread the filling evenly over the crust.
- Sprinkle with remaining crumb mixture and set aside.
- In a medium bowl beat the egg whites on medium speed until soft peaks form.
- Gradually beat in powdered sugar and softened cream cheese.
- Spoon the cream cheese mixture over the top layer of crumb mixture.
- Bake 30-35 minutes more or until golden brown.
- Cool in pan, cut into bars and serve.

- 1. preheat oven to 350°. Spray a 13 x 9" baking pan with nonstick baking spray with flour. In a medium bowl, mix cake mix, pecans, melted butter, and one egg, stirring well. Press into bottom of prepared pan.
- 2. In medium bowl, mix cream cheese and remaining two eggs. Beat at medium speed with mixer until smooth. Gradually add powdered sugar, beating until smooth. Add apples, stirring to mix. spoon over cake mixture. Bake for 50 minutes. Reduce Temperature to 300° and bake for 30 to 35 minutes longer or until set in the center. Cool completely. Cut into 24 squares. Makes 24 servings
