1 teaspoon baking soda

1 and 1/4 cups (300ml) canola or vegetable oil
1/2 cup (120g) plain yogurt or sour cream, at room temperature
1 and 1/4 cups (250g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
3 large eggs, at room temperature
1 Tablespoon pure vanilla extract (yes, 1 full Tablespoon)
3 cups (360g) peeled and chopped apples, about 2-3 large apples
1 cup (200g) packed light or dark brown sugar
1/4 cup (57g) unsalted butter
1/2 cup (120ml) heavy cream
1/2 cup (60g) confectioners' sugar, sifted

Steps:

  • Preheat oven to 325°F (163°C). Spray a 10-12 cup Bundt pan with nonstick spray. Set aside.
  • Whisk the flour, baking soda, cinnamon, nutmeg, and salt together in a large bowl until combined. Set aside. Allow the cake to cool in the pan set on a wire rack, then invert onto a serving plate once cooled and ready to serve.
  • As the cake cools, prepare the brown sugar glaze. Combine the butter, brown sugar, and heavy cream in a medium saucepan over medium heat. Stir constantly as the mixture comes to a simmer and then a rapid boil. Once boiling, stop stirring and allow to boil for 1 minute. Turn the heat down to low, give it a quick stir, and let simmer for 1 minute. Remove from heat and whisk in the sifted confectioners' sugar. Allow glaze to cool and slightly thicken for at least 10 minutes. Spoon glaze over the cake right before serving. 1/2 teaspoon baking soda
1/4 teaspoon salt
150 grams (3/4 cup) caster sugar or granulated sugar
1 cup (approximately 1 large) red apple, peeled and roughly chopped
2 large eggs
1 teaspoon vanilla extract
120 ml (1/2 cup) vegetable oil
120 ml (1/2 cup) Greek yogurt
50 grams (1/4 cup) caster sugar or granulated sugar
1 teaspoon ground cinnamon
1 tablespoon butter, melted
30 grams (1/4 cup) icing sugar or powdered sugar, sifted
1-2 tablespoons milk

Steps:

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper.
  • In a large mixing bowl, add flour, baking powder, baking soda, salt and sugar. Add chopped apple and stir briefly to combine.
