It doesn't have pecans and the frosting has considerably less powdered sugar, making the cream cheese flavor that much more intense. For the holidays, this cake can be dressed up by adorning it with holly berries. Randomly place clusters of three of red hot candies. Cut several "leaves" from a Granny Smith apple and place one on either side of the clusters.

- Stir together first 4 ingredients in a large bowl until well blended.
- Combine flour and next 3 ingredients. Add dry mixture to the butter mixture, stirring until blended. The mixture will be very thick.
- Stir in apple slices. It hardly seems like enough batter to coat the apples, but bakes up beautifully.
- Spread batter into greased 9x13 pan and bake at 350 for 45 minutes.
- For the frosting, beat cream cheese and butter until creamy.
- Gradually add sugar and salt, beat well.
- Stir in vanilla and frost the cooled cake.

- Butter and flour a loaf pan. Pour the batter into the prepared pan and put it in the preheated oven. Bake until a toothpick, inserted in the center comes out clean, about 40 to 45 minutes.
- Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and cool completely.
- Cut the cake in half equatorially and spread half of the icing on the bottom layer. Replace the top half and ice the top of the cake, leave the sides bare. Slice and serve.
- Beat together all of the ingredients in a stand mixer or with a hand mixer until light and fluffy.
