This recipe comes from the Better Homes and Gardens 'so good with FRUIT' cookbook, & was originally meant to be roasted on a spit, over charcoal. I've adapted it for oven cooking since I have no spit! The finished roast should have a crisp jacket of peanut & apple butters with a tangy orange accent.

6 lbs boneless pork loin, rolled, tied
1 cup apple butter
4 tablespoons chunky peanut butter
1 teaspoon orange zest, finely chopped
4 tablespoons orange juice

Steps:

  • Place roast, fat side up, on a rack in a shallow roasting pan, & place in an unheated oven.
  • Turn the oven on to 350 degrees F, & roast the meat, uncovered for 3 hours. About 30 minutes before the end of the roasting time, insert a meat thermometer into the center & continue roasting until the thermometer reaches 170 degrees F.
  • Meantime, gradually stir the apple butter into the peanut butter, then add the orange zest & juice.
  • When the internal temperature of the roast reaches 170 degrees F, brush the apple butter mixture over the entire exposed surface of the roast, then continue cooking for another 15-20 minutes.

Another no-fail, great recipe from my best friend. Very tender, delicious and smells so delightful when cooking! A great company main dish - serve with my Sweet Potato and Apple Casserole. Prep. time does not include resting time.

1 1/2 lbs pork tenderloin
1/2 teaspoon salt
2 cups apple juice
1/2 cup apple butter
1/4 cup packed light brown sugar
2 tablespoons water
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • Using an injection needle, inject apple juice into the the roast in multiple places.
  • Sprinkle with salt.
  • Place tenderloin in a 11x7-inch baking dish.
  • Add remaining apple juice and let stand 30 minutes or chill 2 hours.
  • Bake in preheated 350 degree oven for 15 minutes.
  • Drain.
  • Stir together apple butter and remaining 4 ingredients.
  • Spread or brush over roast.
  • Bake an additional 15-20 minutes or until thermometer inserted in thickest part registers 145 degrees.
  • Let stand 15 minutes before serving.
  • (Temperature will rise during this rest period).

3 pounds pork loin roast
2 teaspoons salt
1 teaspoon black pepper
2 Tablespoons bacon fat, or vegetable oil
1 medium onion, sliced thin
2 teaspoons garlic, minced
2 cups MUSSELMAN'S® Fresh Pressed Cider
½ cup MUSSELMAN'S® Apple Butter

Steps:

  • Step 1 Preheat oven to 350° F. Step 2 Pat pork loin dry with paper towels and season all sides with salt and pepper. Step 3 Add bacon fat (or vegetable oil) to a braiser or Dutch Oven and place over medium heat. Place seasoned pork loin in the pan. Step 4 Scatter onions and garlic around the edges. Cook about 3-5 minutes on each side until golden brown. Step 5 In a small bowl combine apple cider and apple butter together. Pour mixture over browned roast and onions. Step 6 Cover and place in oven for one hour or until internal temperature has reached at least 145 degrees. Step 7 Remove pork loin to a cutting board and allow to rest 15 minutes before slicing.

12 ounces fresh baby carrots, coarsely chopped
1 small onion, chopped
1 boneless pork loin roast (3 pounds)
1-1/2 teaspoons salt, divided
1/2 teaspoon pepper, divided
1 tablespoon olive oil
1 cup apple butter
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
3 garlic cloves, minced
2 cans (15 ounces each ) great northern beans, rinsed and drained

Steps:

  • Place carrots and onion in a 6-qt. slow cooker. Sprinkle roast with 1 teaspoon salt and 1/4 teaspoon pepper. In a large skillet, heat oil over medium-high heat; brown roast on all sides. Transfer to slow cooker., In a small bowl, combine apple butter, vinegar, mustard, garlic, remaining salt and pepper; pour over pork and vegetables. Cook, covered, on low until vegetables are tender and a thermometer inserted into pork reads 145°, 3-1/2 to 4-1/2 hours., Remove roast from slow cooker; tent with foil.
