Time 50m

Yield About 10 waffles

Number Of Ingredients 17

1/3 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
4 cups all-purpose flour
1/3 cup light-brown sugar
1 tablespoon baking powder
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon fine sea salt
2 cups apple cider
1 cup buttermilk
1 teaspoon pure vanilla extract
3 large eggs
4 tablespoons melted butter, for brushing
Nonstick cooking spray

Steps:

  • Arrange a rack in the top position of the oven and preheat to 300 degrees F.
  • For the spiced sugar: In a small bowl, stir together the granulated sugar, cinnamon and nutmeg to combine. Set aside.
  • For the waffles: In a medium bowl, whisk the flour, brown sugar, baking powder, cinnamon, ginger, cloves, nutmeg and salt to combine.
  • Add the cider, buttermilk, vanilla and eggs and whisk well to combine -- don't overmix.
  • Preheat a waffle iron and spray it with nonstick spray. Scoop in enough batter to just cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. Close the lid and cook until the waffle is lightly golden brown but about 1 minute shy of being done and very crisp. (The timing will depend on your waffle iron; check after 3 to 4 minutes.)
  • Open the waffle iron and use a pastry brush to lightly brush the waffle with some of the remaining melted butter. Sprinkle some of the spiced sugar over the surface and close the waffle iron. Continue to cook until the waffle is deeply brown and very crisp, 1 to 2 minutes more.
  • Remove the waffle from the iron and repeat with the remaining batter. (You can hold the waffles on a rack on a baking sheet in the oven to keep them warm until ready to serve.) Serve immediately, warm.

Tips:

  • Choose the right apples. For the best flavor, use a combination of sweet and tart apples, such as Granny Smith, Honeycrisp, and Braeburn.
  • Cook the apples until they are very soft. This will help to create a smooth and flavorful butter.
  • Use a food processor or blender to puree the apples. This will help to create a smooth and consistent batter.
  • Be careful not to overmix the batter. Overmixing can make the donuts tough.
  • Cook the donuts until they are golden brown. This will ensure that they are cooked through.
  • Serve the donuts warm with your favorite toppings. Some popular toppings include maple syrup, powdered sugar, and fresh fruit.

Conclusion:

Apple butter waffle donuts are a delicious and easy-to-make breakfast or snack. They are perfect for fall, when apples are in season. With a few simple ingredients, you can create a batch of these delicious donuts that are sure to be a hit with your family and friends. So next time you're looking for a sweet treat, give these apple butter waffle donuts a try!
