Time 20m

Number Of Ingredients 7

2 lbs New York Strip Steaks (2 steaks) (or Ribeye or Top Sirloin Steaks (1 lb each steak, 1 1/4" thick))
1/2 Tbsp vegetable oil (or any high heat cooking oil like canola or extra light olive oil)
1 1/2 tsp sea salt
1 tsp black pepper (freshly ground)
2 Tbsp unsalted butter
2 cloves garlic (peeled and quartered)
1 sprig fresh rosemary

Steps:

  • Thoroughly pat steak dry with paper towels. Just before cooking, generously season with 1 1/2 tsp salt and 1 tsp black pepper
  • Heat the cast iron pan until hot then add 1/2 Tbsp oil over medium-high heat, swirling to coat. Once the oil is very hot, add steaks to the skillet. Sear the steaks on the first side for 4 minutes until a brown crust has formed then flip and cook another 3-4 minutes. Using tongs, turn the steak on its sides to render the white fat and sear the edges (1-minute per edge).
  • Reduce heat to medium and immediately add 2 Tbsp butter, quartered garlic cloves and rosemary to the pan. Spoon the butter sauce over the steak, tilting the pan to get butter on your spoon. Continue spooning the sauce over the steak for a minute or until the steak is about 5-10 degrees from your desired doneness (the temperature will continue to rise another 5-10 degrees while steaks rest).
  • Transfer steak to a cutting board, loosely cover and rest 10 minutes before slicing into 1/2" strips to serve. Spoon extra butter sauce over sliced steak to serve.

Yield 7

Number Of Ingredients 6

4 Green Onions chopped
2 tb Light soy sauce
2 tb Dry sherry
1/4 ts Freshly grated ginger
4 tb Apple butter
1 Flank steak (about 1-1/2

Steps:

  • SERVES 7 I know that this sounds like Im pushing it, but one of my former cooks, Scott, came running over with this recipe and told me I had to try it. I think he developed it when he came home one night and found little in the pantry except apple butter. What do you think could have caused him to come up with such a recipe? Interesting that he always has soy, sherry, and fresh ginger on hand. It is really quite good. Place the steak on a plate. Mix the remaining ingredients together and rub 2 tablespoons onto the steak, both sides. Allow to marinate for 1/2 hour and then broil on an oven rack to your liking. I enjoy mine a bit rare. Turn once. Slice the steak across the grain of the meat and place the pieces in an oven-proof dish. Pour the remaining sauce on top of the meat and place under the broiler for just a few moments, thus allowing it to glaze a bit. This is delicious served with Rice with Cheese and Onions (see recipe). From . Downloaded from Glens MM Recipe Archive, G Internet.

APPLE BUTTER SAUCE

Categories     condiment

Time 1h30m

Yield 4 servings

Number Of Ingredients 7

4 cups canned applesauce
1 cup packed brown sugar
2 tablespoons grated orange rind
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg

Steps:

  • Combine the applesauce, orange rind, cloves, brown sugar, all spice, nutmeg and cinnamon in a saucepan. Bring to a simmer and cook for 1 hour, stirring occasionally. Cool and serve.

Tips:

  • Choose the right cut of steak: For this recipe, a tender cut of steak is best, such as ribeye, strip loin, or tenderloin. These cuts will remain tender and juicy even after cooking.
  • Use ripe and flavorful apples: The apples you use will have a big impact on the flavor of the dish, so choose ripe, flavorful apples. Some good choices include Honeycrisp, Granny Smith, or Pink Lady apples.
  • Don't overcrowd the pan: When searing the steak, make sure not to overcrowd the pan. This will prevent the steak from cooking evenly and will also make it more likely to steam rather than sear.
  • Let the steak rest: After cooking the steak, let it rest for a few minutes before slicing. This will allow the juices to redistribute throughout the steak, resulting in a more tender and flavorful steak.
  • Serve with your favorite sides: Apple butter steak can be served with a variety of sides, such as mashed potatoes, roasted vegetables, or a simple salad.

Conclusion:

Apple butter steak is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of sweet and savory flavors is sure to please everyone at the table. So next time you're looking for a new steak recipe, give apple butter steak a try.
