APPLE BUTTER MUFFINS
Meet the Cook: As an ex-farm girl, I have fond memories of making apple butter with my grandmother. I often bake muffins for my husband and me to eat during job breaks. I work part-time, but the best part of my week is the time I spend at home being a wife and a mother to our daughter, born just last November. -Anita Bell, Gallatin, Tennessee

Tips:
- Use ripe apples: For the best flavor, use ripe, flavorful apples. This will help to create a rich, complex apple butter filling.
- Simmer the apple butter: Don't rush the apple butter. Simmer it for at least 30 minutes, or until it has thickened and darkened in color. This will help to develop the flavor of the apple butter and make it more spreadable.
- Use a variety of spices: The spices in this recipe are just a suggestion. Feel free to use your own favorite spices, or experiment with different combinations. Some good options include cinnamon, nutmeg, ginger, and allspice.
- Don't overmix the batter: Overmixing the batter will make the muffins tough. Mix just until the ingredients are combined.
- Fill the muffin cups halfway: Don't overfill the muffin cups, or the muffins will rise too much and spill over the sides. Fill the cups about halfway.
- Bake the muffins until a toothpick inserted into the center comes out clean: This will ensure that the muffins are cooked through.
Conclusion:
These apple butter-filled spiced muffins are a delicious and easy-to-make treat. They're perfect for breakfast, lunch, or a snack. The apple butter filling is rich and flavorful, and the spices add a warm and inviting aroma. These muffins are sure to be a hit with everyone who tries them.
