1 Cup diced onion
1 Cup diced celery
2 tart apples, cored & cut in 1/2 cubes
1 Tbsp. dried thyme
2 tsp. rubbed sage
1 tsp. ground black pepper
1 lb. cubed bread for stuffing(I use sour dough)

Stir & transfer to a large bowl. Gradually add bread crumbs, folding in gently until stuffing is moist. Mix in nuts & currants. Let cool completely before stuffing turkey.

Tips:

  • Use a variety of apples. This will give your stuffing a more complex flavor. Some good options include Granny Smith, Honeycrisp, and Braeburn apples.
  • Tart apples work best in stuffing. They provide a nice contrast to the sweetness of the apricots and the other ingredients in the stuffing.
  • Don't overcook the apples and apricots. They should be tender but still have a little bit of bite to them.
  • Use a large bowl to mix the stuffing ingredients. This will make it easier to combine everything evenly.
  • Stuff the turkey loosely. This will allow the stuffing to expand as it cooks.
  • Bake the turkey at a moderate temperature. This will help to prevent the stuffing from drying out.
  • Let the turkey rest for 10-15 minutes before carving. This will allow the juices to redistribute throughout the turkey, making it more tender and flavorful.
