APPLE AND GORGONZOLA CROSTINI WITH LAVENDER HONEY

Apple and Gorgonzola Crostini With Lavender Honey image

Mmmmm! Compliments of Sav-On/Albertson's Grocery Store chain. I subbed apple for pear. No worries if you don't have lavender honey. Simply add one half teaspoon crushed dried culinary lavender to regular honey.

Time 12m

Yield 16 baguette slices

Number Of Ingredients 5

1 loaf baguette, cut into sixteen 1/2-inch slices

4 ounces gorgonzola (or any bleu cheese of your choice)
snipped fresh chives, for garnish

Categories     Bake     Vegetarian     Blue Cheese     Apple     Honey     Sage

Yield Serves 6-8

Number Of Ingredients 8

5 sage leaves
1/2 cup honey
1 baguette, cut diagonally into 1/2-inch-thick slices
Extra-virgin olive oil, for brushing
Kosher salt
freshly ground pepper
8 ounces mild blue cheese (such as gorgonzola), room temperature
1/2 apple, thinly sliced (preferably Macintosh or Honeycrisp)

Steps:

  • Preheat oven to 400°F. In a small saucepan, warm the sage and honey over medium-low heat until fragrant and the honey just begins to bubble, about 4 minutes. Remove from heat and let steep for 10 minutes. Discard sage and let honey cool to room temperature.
  • Lightly brush one side of each bread slice with oil and sprinkle with salt and pepper. Place slices on a rimmed baking sheet and toast in oven until golden brown, about 7 minutes. Remove from baking sheet and let cool. Spread blue cheese on baguette slices and top with apples and walnuts. Drizzle toasts with sage honey.

Tips:

  • Choose ripe, flavorful apples. Granny Smith, Honeycrisp, and Pink Lady are all good choices.
  • Use a good quality gorgonzola cheese. Look for a cheese that is creamy and flavorful, with a slightly pungent aroma.
  • Make the lavender honey ahead of time. This will allow the flavors to meld and develop.
  • Use a good quality baguette. A fresh, crusty baguette will provide the perfect base for your crostini.
  • Slice the baguette into thin slices. This will help them toast evenly.
  • Brush the baguette slices with olive oil. This will help them to brown and crisp up in the oven.
  • Toast the baguette slices until they are golden brown. Keep an eye on them so that they do not burn.
  • Top the baguette slices with the apple slices, gorgonzola cheese, and lavender honey.
  • Serve immediately. These crostini are best enjoyed warm.

Conclusion:

Apple and gorgonzola crostini with lavender honey is a delicious and easy-to-make appetizer that is perfect for any occasion. The sweet and tart apples, the creamy and flavorful gorgonzola cheese, and the fragrant lavender honey come together to create a truly unique and memorable dish. These crostini are sure to impress your guests, and they are also a great way to use up any leftover apples or gorgonzola cheese.
