Dough for single-crust pie
1-1/4 cups sugar
1/4 cup cornstarch
1/4 teaspoon salt
3 cups whole milk
3 ounces unsweetened chocolate, chopped
4 egg yolks, lightly beaten
3 tablespoons butter
1-1/2 teaspoons vanilla extract
Optional: Whipped cream and grated chocolate

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. In a large saucepan, combine sugar, cornstarch and salt. Stir in milk and chocolate. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. , Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. , Gently stir in butter and vanilla until butter is melted. Spoon into crust. Cool on a wire rack. Cover and chill for at least 3 hours. 2 eggs
1 1/4 cups sugar
1/4 cup milk
60 g bittersweet chocolate, melted (2 ounces)
1/2 cup butter, melted
1 teaspoon vanilla
1 pie crust (for 26cm/10 inch pie pan)
3 apples (thinly sliced)
1/3 cup walnuts

Steps:

  • Preheat oven to 180°C (350º) (heat and timing are basing it on convection oven).
  • Prick pie crust and par- bake for 5 minutes.
  • Beat eggs well.
  • Add sugar and beat again.

2 tablespoons unsalted butter
1 box chocolate cake mix, plus additional ingredients for making the cake
1 store-bought 8-inch apple pie
8 ounces bittersweet chocolate chips
1 cup heavy cream
1 tablespoon dark rum
Kosher salt
1 cup chopped pecans

Steps:

  • For the chocolate apple pie cake: Preheat the oven to 350 degrees F.
  • Use the butter to grease the bottom and sides of a 9-inch cake pan or springform pan. Cut out a circle of parchment paper to fit the pan and place it on the bottom.
  • In a large bowl, prepare the cake batter as instructed on the box. Pour 1 cup of the batter into the cake pan and spread it out. Add the apple pie on top of the cake batter, then pour the rest of the cake batter over the top and around the sides. Spread it to make sure there are no air pockets.
  • Bake the cake until a toothpick inserted in the center and around the edges comes out clean, 50 to 55 minutes. Remove to a rack to cool slightly. When cool enough to handle, turn the cake out onto the rack, peel off the parchment paper and allow to cool completely.

3 large Cortland/McIntosh apples, peeled, cored and sliced
2 tbls. honey, darker the better
1 tbls. dark brown sugar, crumbled
3 pats of butter
1 cup chocolate chips (semi-sweet)

Steps:

  • Preheat oven 400 degrees for 10 minutes. Add above ingredients as listed in layers (except butter).
  • Add top crust, make 3 slices in crust for steam...put butter pats in vents. Wet fingers with water & wash top of crust.
  • Add aluminum sheet slices or crust protector for the edges. I use heavy (old fashioned) glass pie plate...the better to see what the crust is doing underneath.
  • Bake at 400 degrees for about 10-15 min. or until the bottom of crust is browned & not mushy. Lower heat to 350 degrees and cook about 25-30 minutes longer to steam insides.
  • I have used butterscotch chips the same way, just lighten the sugar and honey.
