2 cups sour cherries, pitted
2 tbsp lemon juice
1 tsp vanilla extract
1/3 cup granulated sugar
1/4 cup all-purpose flour

1 tsp cinnamon
1/8 tsp salt
6 tbsp butter, melted
1 cup rolled oats

Steps:

Juice of 1/2 a lemon
3 whole apples, cored, halved and sliced, but not peeled
Store-bought caramel sauce, for serving
1/4 cup chopped pecans

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the puffed pastry rectangles onto a baking pan that's been sprayed with nonstick spray or lined with parchment paper. Add the sugar, salt and lemon juice to the apples. Stir to combine. Allow to sit for a few minutes.

2 Easy Pastry Dough disks
1 egg, beaten to blend (for glaze)

Steps:

  • Position rack in lowest third of oven and preheat to 400°F. Stir first 5 ingredients in large bowl. Mix in apples, dried cherries and preserves.
  • Roll out 1 dough disk on lightly floured surface to 13-inch round. Transfer dough to 9-inch-diameter glass pie dish. Brush inside and top edge of crust with glaze. Spoon filling into crust.
