Steps:
- Place all ingredients in a large crock pot (cut meat in half if necessary); stir to mix.
- Cook on HIGH for 4 to 5 hours or on LOW for 8 to 10 hours.
- Remove meat and vegetables and some of the cooking liquid.
- Slice meat thinly across the grain.
- Serve with vegetables and some of the liquid.
Tips:
- Choose a corned beef brisket that is about 3-4 pounds in weight.
- Soak the corned beef in cold water for at least 12 hours, changing the water every 4-6 hours.
- To cook the corned beef, place it in a large pot or Dutch oven and cover it with water. Bring the water to a boil, then reduce heat to low and simmer for 2-3 hours, or until the corned beef is tender.
- While the corned beef is cooking, make the apple and brown sugar sauce. In a medium saucepan, combine the apples, brown sugar, butter, apple cider vinegar, and water. Bring to a simmer over medium heat, then reduce heat to low and cook for 15-20 minutes, or until the apples are tender and the sauce has thickened.
- Once the corned beef is cooked, remove it from the pot and let it cool slightly. Slice the corned beef against the grain and serve it with the apple and brown sugar sauce.

Apple and brown sugar corned beef is a delicious and easy-to-make dish that is perfect for a special occasion or a casual family meal. The corned beef is tender and flavorful, and the apple and brown sugar sauce is sweet and tangy.
