The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest
½ teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups cubed fresh pineapple
2 cups strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes
2 cups blueberries

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

1 watermelon (cut into small pieces)
1 pineapple (cut into small pieces)
4 cups red grapes (rinsed and pat dry)
1 quart fresh strawberries (washed, hulled, halved)
3 cups Berries (your favorite kind)
Any other fruit you enjoy or that is in season!

Steps:

  • Cut fruit into small pieces. Store each type of fruit separately, in ziplock bags. Place 1 or 2 pieces of folded paper towel in the bottom of the ziplock bags containing the really juicy fruits, like watermelon and pineapple. Refrigerate until ready to serve. When ready to serve, add everything to a serving bowl and serve immediately.

A co-worker was telling me about this fruit salad she made over Christmas and I decided to try it this weekend. It is delicious. Even my 5 year old GD loved this!! It came from the Taste of Home Treasury of Christmas Recipes. It is even better if you make it two days ahead as the anise extract mellows into the fruit. Prep time is only chopping of the fruit (I buy the grapefruit in the jar)

2 cups water
1 -1 1/2 cup sugar
1/3 cup lime juice or 1/3 cup lemon juice
1 teaspoon anise extract
1/2 teaspoon salt
3 oranges, peeled and sectioned
3 kiwi fruits, peeled and sliced
2 grapefruits, peeled and sectioned
2 large apples, cubed
1 pint strawberry, sliced
1 lb green grape
1 (20 ounce) can pineapple chunks, drained

Steps:

  • In a medium saucepan, combine water, sugar, lime juice, anise and salt. Bring to a boil over medium heat, cook for 20 minutes stirring occasionally. Remove from heat; cover and refrigerate for 6 hours or overnight.
  • Combine fruit in a large bowl (I use a trifle bowl). Add dressing and toss to coat.
  • Cover and chill for at least 1 hour (Actually it is much, much better if you make it at least one day ahead as the flavors mellow).

1 pint fresh strawberries, halved

Saw some great deals on fruit this week so I decided to make this fruit bowl for my family- to eat as they wish or to add it as a side along with a tuna sandwich, turkey burger, or ice cream....etc. Very refreshing and colorful.

1/2 small personal size seedless watermelon, rind removed and melon cut into bite size
1/2 small muskmelon(orange in color), rind removed and cut into bite size
3 medium peaches, pitted and cut into bite size
1 c green sweet grapes,leave whole
1 c sweet black cherries, pitted, cut in 1/2
1 Tbsp granulated sugar
1 Tbsp orange juice

Steps:

  • 1. Slice the 1/2 melons into small slices and remove seeds and rind. Cut cherries in 1/2 and remove pits. Cut peaches in 1/2 and remove pits. Slice and cut into bite size pieces into a small bowl , combine peaches with the juice and sugar and stir to coat evenly;set aside.
  • 2. Layer pieces of each fruit into a large bowl. You may add other fruits also if desired; such as apple slices added to the peach mixture before adding to fruit bowl. Add strawberries or kiwi,pieces.
  • 3. Chill, keeping ice cold and serving alone or with your favorite sandwich or dinner as a side dish or dessert with a scoop of ice cream or sherbet.

1 large watermelon
1 cantaloupe, halved and seeded
1 honeydew melon, halved and seeded
2 (15 ounce) cans mandarin oranges, drained
2 (20 ounce) cans pineapple chunks, drained
2 cups halved fresh strawberries
2 cups seedless grapes
½ cup water
¼ cup white sugar
2 tablespoons grated lemon zest

Steps:

  • With a large, sharp knife, remove the top 1/4 section of the watermelon. With a melon baller, scoop flesh from inside of watermelon, removing as many seeds as possible. Leave 1/2 inch of flesh inside the shell of the watermelon. Scoop cantaloupe and honeydew in the same manner, removing as much flesh as possible, and discarding the rinds. Refrigerate fruits separately until ready to assemble.
  • In a small saucepan over medium-high heat, bring water and sugar to a boil. Remove from heat, and continue stirring until sugar has completely dissolved. Add lemon zest, and set aside to cool.
  • To serve, place watermelon balls, cantaloupe, honeydew, oranges, pineapple, strawberries, and grapes, in a large mixing bowl. Pour syrup over, and toss thoroughly. Transfer mixture to watermelon bowl, and serve. Set aside any fruit mixture that will not fit. There will be enough fruit to refill the bowl.
