2 oz light rum
8 oz coconut milk
2 tsp instant coffee or coffee liquor (2oz)
4 Tbsp pineapple juice from canned pineapple
toasted coconut and pineapple (for garnish)

Steps:

  • 1. Combine all ingredients in blender (except garnish) and blend till smooth. Place rim of glasses in pineapple juice, then in toasted coconut, Pour drink into glasses and garnish with pineapple.
