CUBAN-STYLE YELLOW RICE
Yellow rice is a staple in the Caribbean because of its beautiful color and flavor. Being Cuban, our household often served yellow rice. It's traditional to garnish yellow rice with pimentos, but I don't like them so I don't. Serve yellow rice with Cuban-style roast pork, or add cooked chicken pieces while cooking the rice to make Arroz con Pollo.

YELLOW RICE (ARROZ AMARILLO)
Sofrito, a sautéed vegetable mixture that typically contains garlic, onion, and bell pepper, is used as a seasoning in much of Latin America and the Caribbean. Here, it flavors yellow rice. The color comes from annatto seeds-which have an astringent, slightly peppery flavor-heated in oil until bright red-orange.

- Cook onion, bell pepper, garlic, and cilantro in 1 1/2 tablespoons annatto oil in a 2-to 3-quart heavy saucepan over medium heat, stirring, until vegetables are softened, 3 to 5 minutes. Tips:
- Choose the right rice. Medium-grain rice, such as Calrose or Japanese rice, is the best choice for annatto rice. It has a slightly sticky texture that helps the annatto oil and flavor adhere to the rice.
- Use annatto seeds or annatto powder. Annatto seeds are more traditional, but annatto powder is easier to find and use. If using annatto seeds, you will need to soak them in hot water for 30 minutes before using.
- Toast the annatto seeds or powder. This will help release their flavor and aroma. If using annatto seeds, toast them in a dry skillet over medium heat for 5-7 minutes, stirring constantly. If using annatto powder, toast it in the same way for 1-2 minutes.
- Infuse the oil with the annatto. Heat the oil in a saucepan over medium heat. Add the toasted annatto seeds or powder and stir constantly for 5-7 minutes, or until the oil is a deep orange color. Remove the annatto seeds or powder from the oil and discard.
- Cook the rice. Rinse the rice in cold water and drain. In a medium saucepan, combine the rice, water, annatto oil, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and all of the liquid has been absorbed.
- Fluff the rice. Once the rice is cooked, remove it from the heat and let it stand, covered, for 5 minutes. Then, fluff the rice with a fork and serve.

Annatto rice is a delicious and colorful side dish that is perfect for any occasion. It is easy to make and can be customized to your own taste.
